We have had many calls recently for meals for families with new babies and families dealing with illness. I have several chicken recipes that are yummy and travel well, but I don't have any beef recipes.

Would anyone care to share recipes that travel well and are enjoyed by those who receive them?

If you are interested in a vegetarian option, I've got one that is easy and tasty.

Stuffed Italian Shells

1. Box of large pasta shells
2. Container of ricotta cheese
3. Frozen spinach, defrosted and water removed
4. 2 eggs
5. 2 lbs of your favorite cheeses (I like chedder, jack, and mozarella) grated.
6. 1 or 2 jars of pasta sauce

Cook shells according to package directions. Drain and cool. Mix ricotta cheese, spinach, eggs (mix lightly before adding), and grated cheese. I like to do this wearing disposable gloves so I can get it really mixed well with my hands. Stuff mixture into shells, and cover generously with pasta sauce.

Cooking instructions are bake covered at 350 degrees for around an hour or until hot bubbly.

This makes enough to feed a large family if you add salad and a loaf of french bread.

The recipe is really flexible. My kids and dh don't like it with ricotta and spinach, so I just use the cheese combination for theirs. You can pretty much stuff the shells with anything you want, and change the sauce as well (white sauce, for example). I like to serve it when we have company because it can be made in advance and just tossed in the oven.

What about a shepherd's pie? My family loves it and you can double the recipe if it's for a large family.

Shepherd's Pie
1 1/2 lbs. ground beef
1 onion chopped
salt and pepper to taste
1 can cream style corn or any vegetable (we enjoy corn)
mashed potatoest to cover dish

Brown gr. beef and onions. Drain off fat an season with salt and pepper. Spoon meat mixture into bottom of lightly greased 1 qt casserole.

Spread corn over meat. Add mashed potatoes over corn. Bake at 375 for 25 minutes.

You can add a loaf of crusty french bread and a salad if you want and you have a complete meal. Yum! My children have been begging for this. I think I'll need to pick up the ingredients!

I have done sloppy joe's before. It's easy, most people/kids like it and it freezes well. (with buns and a frozen vegetable)

A simple meatloaf with baked potatoes is very easy! Just add a veggie and dessert, and it's a full meal.

I don't know if it happens to anyone else, but when our newest dd was born, we got SO MUCH pasta it was funny    I know I always have meat cravings, which is why I send meatloaves to new mommies.

I find it easier to always bring the same meal. I bring Mexican seasoned ground beef, tortillas, shredded Mexican cheese, shredded lettuce, jar of mild salsa, juice, fresh fruit and cookies.

I just (literally, as in 5 minutes ago) made this and took it to our neighbors who just had their first baby. It worked out great because I made a double batch, made a big pan for our family, and a little pan for them. (I felt like I was making a side dish! ) It's healthy and delicious!

I usually make mostacolli. I learned how to make it in St. Louis and everybody loves it. It is quick and easy and goes great with a fresh tossed salad.

Mostacolli

Italian sausage (hot, sweet or mild)
penne pasta
motzerella cheese
crushed (or chopped tomatoes)

I vary the recipe and it is really great if you can add fresh onions, peppers, and tomatoes. But when you cook for children, you sometimes have to leave those items out!

I do tacos often. A pan of seasoned ground beef, dish of rice, dish of black beans, tray with lettuce, cheese, sour cream and guacamole, a pack of hard and a pack of soft shells.

The ground beef mix I make has a lot of veggies in it, so it is a complete meal. I shred carrots, zucchini, and celery, and dice tomatoes and peppers into the mix.

Brushetta Chicken Bake is a great, easy meal to take to people. My 6 an 7 year old have been making this regularily and they made it for a family with a new baby the other day.

I made sub sandwiches for a family one night. Ham/cheese and turkey/cheese. I included some sliced tomatoes,red onion and shredded lettuce. I knew they would have mayo and mustard. Sides were cut up veggies and potato salad. Cookies for dessert. Very easy for mom, she didn't even have to heat anything up and I think she even used paper plates to serve.
