I do not really cook pork - but as it is one of the few things I am not allergic to - I bought these chops yesterday. Problem is I have no idea what to do with them (do not want to grill) - anyone have some ideas for a simple kid-friendly recipe without too many ingredients? What do you serve with?

How thick are they, Marilyn? If they're about an inch thick -- my favorite method is braising. Salt and pepper, then sear each side for just a minute either with or without fat, then add chicken stock or white wine, and cook on low for 20 minutes or so.
If thinner, I like to pound them 'til about 1/3 inch thick or so -- and then my favorite way is to marinate, then either cook really quickly pan-fried or deep-fried.
Either way you can also coat with a bit of flour or flour/cornstarch (or if wanting gluten-free, rice-flour and /or cornstarch) before searing/frying.
Apples are a natural with pork. When doing a simple braise I'll have apples and onions cooking in another skillet -- or if lazy I'll stick them in the braise the last 5 minutes or so of cooking (so they don't get too mushy).
If doing the marinate/pan-fry I usually go Asian -- so it's marinated in tamari (wheat free) plus whatever I feel like adding (chili-garlic paste, or just garlic mashed to a paste, a bit of sugar sometimes, sesame oil, chopped green onions, minced ginger) -- then I serve with either stir-fried veggies and/or a quick Asian pickle/relish (cucumbers, carrots, broccoli stems, daikon are all yummy -- in a bit of vinegar, sugar and salt).

Forgot to say, before you eat them, either check the temp or cut into them -- pork has to be cooked to a safe 160 degrees. Sometimes it will still appear to be a bit pink at this temp, but it should be safe.

Thanks Stef. The braising sounds great. I would love the Asian recipe - but I am trying to keep it to a few ingredients (plus dd has soy and sesame allergy)

My favorite is to coat with flour seasoned with italian seasoning and pan fry and then pop in the oven to bake to finish cooking. If I make a gravy then the kids love mashed potatoes with it and just some vegetable for a side (salad or cooked green beans or the like)

Pour ranch dressing on them until internal temp says done. Very good.

I don't like pork - except for my moms pork chops. She always made them in the electric frypan (though I am sure a regular pan would work, she used thinly sliced onions and green/red peppers, in a gravy. Served over rice. Oh-so-good. I can call and get the recipe (however, my mom is one of those cooks who eyeballs most everything, so recipes are sketchy....)

I throw them in the crockpot or oven with salsa. Walmart sells a Peach Pineapple Chipotle salsa which is very good with pork! Serve with black beans and rice (bonus, the beans can go in the crockpot too!)
Glazing with apricot jelly is also a classic, but simple salt and pepper is good on high-quality chops.

Ooh - thanks for all the recipes - right now I have nice thick chops pan frying with salt, pepper and garlic. In another pan I have onions and apples pan frying. And I have rice in another pan. Yum! can't wait for dinner.

We don't eat pork much anymore. However, my all-time fave recipe was to sear the chops after sauteeing onions in an electric skillet. Add cider vinegar and chicken stock and cook on medium heat for about 15 minutes, add apple wedges (skins on) and cook for another 5 minutes or so. The liquid should cook way down. I seasoned with rosemary, salt and pepper before searing.
Serve with hot buttered noodles and peas - yummy!
I make this with chicken now.

It's a nice, hearty dish and you can adapt it to be made in the crockpot. Of course, you'd need to also consider what allergies your family has.
