I have dragged myself, and my family,out of the depths of fast-food rut syndrome, and have meal planned for three+ weeks(dinner). That anything domestic doesn't come easy for me, is a HUGE understatement....so, please, keep in mind that I (in my 40's), am still a beginning cook. Nothing is organic, and I will add more/better variety to vegies, when our farmer's market is offering more.

~Ground turkey tostados w/guacamole.

~Baked BBQ Chix wings(looking for a better recipe,hint,hint..) w/Texas fries.

~Crockpot Pork snadwiches w/corn on the cob.

~Leftover pork will be turned into Pork Quesidillas w/ guacamole.

~Stuffed peppers(using ground turkey) w/corn bread.

~Beef stir fry(new recipe from allrecipes)

~Chix salad sandwiches w/ corn on cob.

~Grandpa Bobby's(God rest his soul)Layered Enchilladas-either w/gound turkey or just veg.

~DH grill's steaks(we're a small family) w/baked Pots and salad.

~Crock-pot Taco Chix w/all the fixins.

~BLATs(Bacon,lettuce,tomato,avacado) w/cottage cheese.

~Grilled Turkey burgers w/zucchini dish.

~Loaded grilled pots.

~Turkey sausage dish(not decided on exact recipe)

In between these, we will go for mega-easy dinners...

Cereal
Pancakes
Cold cheese sandwiches
All out platter-I put out a platter filled w/a variety of foods-olives,cheeses,nuts,carrots,crackers,cold cuts,vege sticks,pickles,etc...
Muffins w/yogurt
Cold vege sandwiches

In no particular order....

So happy to see this thread. Like you we are trying to get out of the depths of fast-food rut. Too many days in the car do that to a family.

Awhile back I was on a menu craze. It was very successful. Then May happened and by June I was too tired to plan.

The past couple of weeks have been busy and I haven't cooked much. Period. Well, maybe a little but it's all been "plan and make it that day" things. I miss my menus.

So I don't have any to share at the moment but I do have tonights. Dh's b-day is Saturday but we won't be here so tonight I'm cooking:

Shrimp LaFourche
Crawfish Etoufee

[ETA: Diced fresh-cut tomatoes, diced avocado, homegrown sweet basil, and small-waxed cheese the girls love but I don't know the name of sprinkled with mozzarella cheese]

And dh's special request...a 2-layer German chocolate cake!

Here's our Menu Plan for the week:

Monday: Spaghetti and Peach Cobbler (to celebrate St. Joseph Cafasso)
Tuesday: Chili and Cornbread
Wednesday: Beef Barley Stew (actually it was buffalo-lol!)
Thursday: Chicken Burritos and Guacamole
Friday: Fish/Fries and Leek and Lentil Soup
Saturday: Upside Down pizza casserole
Sunday: Salsa and Grain Pilaf and Grill Hot Dogs and Hamburgers probably with some baked beans and salad also!

I've been trying to do more planning since the beginning of the year. I saw a thread here from someone who plans all meals and two snacks a day. She's my hero! One week when my hubby was on vacation I planned lunches and suppers but that's as good as it gets around here.
I'm always looking for something new and easy!

Monique-Yay! Thanks for joining!! Since we are a small family, usually our dinners become next day lunches.

I think this thread hasn't gotten too many replies, as so many Mama's put thier plans on their own blogs-which makes perfect sense!

I know what you mean, Marilyn. I've been in a slump all June. I seem to prefer reading about food than cooking it.

I have tried to keep it to one pot meals topped off with raw vegetables and fresh fruits..

I've taken serious notes from blogs, made use of constructive laziness and yummy desserts to hide my lack of planning and my inefficiency.

I am painting my kitchen, so my appliances are on my back porch. This was supposed to be a quick project, so I had planned 3-4 days of no-cook meals. It has been a week and a half and I am out of ideas (except tonight we are grilling Chicken Not-Kebabs with corn).

My plan for this week was:

Monday - Pizza
Tuesday - hot dogs, tater tots, and broccoli
Wednesday - easy chicken & dumplings
Thursday - dinosaur chicken nuggets, peas, pasta salad
Friday - Spaghetti
Saturday - Honey Orange Crockpot chicken if I remember to put it on; cereal, probably, if I forget until too late.


Oh, my, all the junk in that menu - it is embarrassing.   BUT - DH is gone at night, and it is just so much easier to make them stuff I know that they like.

we don't get our paycheck until next week so I am trying hard to be creative with a somewhat empty pantry. I have components...I just need a few more to make it work better

I want to spend some time really planning out a 2 week menu cycle for the rest of summer, I think. It is just so much easier when I do that, I don't know why I keep falling out of the habit.

Marilyn-it is not that hot here, but we live in an OLD house-which has the original windows,read:freezing in winter,sizzling in summer! All but the baked BBQ wings I have planned for either the crock-pot,grill,or stove top-which as much prep done in the AM as possible.

Jen-herei s the recipe(just in my head-now onto the keyboard...)

Grandpa Bobby's Layered Enchillada's

(This can be made with ground beef or turkey, or no meat at all.)

This is what I use for our family of four-so adjust according...

1 lrg. can of red MILD enchillada sauce(or 2-3 small cans)

2-3 small cans of dark red kidney beans-drained.

At least 8 oz of cheese of preference-I usually go with mild cheddar.

Corn tortillas

Lettuce of choice-I will usually do leafy greeen or butter crisp-shredded

Tomatoes-chopped

1 onion-finely chopped

Black olives-sliced

Sour cream

OK.

If using meat-brown it. Then add sauce and beans.

If not using meat-in a large skillet, heat up sauce and beans.

Cut up vegies,shred cheese.

Throw the tortillas(I can do about 3-4 at once)onto the sauce mixture-and drench well-so that they are soft.

Put one tortilla on a plate-and start the layering and repeat-so it looks like this...

Tortilla on bottom topped with sauce/bean/meat mixture then sprinkle SOME cheese. I stop there for my DC. For me-I do a two stacker, and DH does a three stacker.

After final layer(cheese on top) put toms and lettuce around edge of plate(circled around) and sprinkle the top with diced onions and sliced olives. Top off with sourcream.

Optional for DC.... I will set aside just the beans and or meat-no sauce. Then layer according-with them choosing which-if any- vegies(they ALWAYS choose olives).

Laura-My DC would love to eat at your home! NO matter, it is still homecooking! Yes, having plans makes life ssoooo much easier!!

I hate,hate the ruts I get into! Maybe by the time my DC are in college, I will FINALLY have my domestic habits down pat!

Michelle-is your kitchen finished, and appliances back inside? We went w/o a kitchen sink or counter for 3 mos, doing the dishes in a basin in the tub- I thought I would go NUTS!!

I think my next meal planning will be from the budget planning area on allrecipes.com, or from one of the links from Cay.

Anyone else want to join?

Spoon meat mixture evenly into greased 9X13 dish. Place cheese over hot meat mixture. Pour topping evenly over cheese covering completely then sprinkle with Parmesan. Bake at 400 degrees for 20-30 minutes or until puffed and deep golden.

OK - I finally have a skeleton plan.

Saturday - I went to the farmers market and got lots of summer vegetables - we had zucchini/eggplant/pepper casserole (tomato free ratatouille) and garlic parmesan flatbread with fresh apricots

Sunday - we had beef and barley casserole from the crockpot

Monday - pasta salad with cauliflower cheese

Tuesday - crockpot roast chicken with new potatoes and carrots and peas (we eat at 8.30 pm because of track meet)

Wednesday - sweet potato fries and chicken sausage

Thursday - Bacon and egg quiche with potato crust

July 4th - grilled hotdogs, bratwurst and flat iron steak. Big salad. Red white and blue pie (still trying to find my recipe)

Saturday - pizza!! (from out!!)

Upside down pizza casserole looks great. I too am in a slump we have been traveling quite a bit. (my father was ill) I am hoping to get it together while we are on our camping trip this weekend. I guess I am hoping for some down time to work on menus LOL. I can't go into having this next baby without getting it together just a little bit.
