Ladies, I started to eat wheat-free and noticed such a huge difference in myself - in terms of headaches gone, digestive troubles that have plagued me for years gone, more energy, less tired - but I can't figure out how to do it so it takes less mental energy to figure out meals. And less cash!

I think DD may have a wheat sensitivity too. Since she started weaning she has had a rash, and the nurse said it is allergic reaction.

Any advice from anyone who already does this?

I don't eat wheat because of the same reasons you listed...plus it makes me REALLY moody.

It's easy for me but I don't really no how you would do it with kids. No bread, no pasta...yikes. I'll do some research on the web and see what I can come up with. Surely, many people have done this before.

I'm not an expert, I can only speak from experience.

Some people who can't tolerate wheat can tolerate other grains like spelt, kamut. Whenever I eat wheat I suffer from terrible excema (sp?), but I can eat spelt and kamut without any problem. Maybe after eating wheat free for a couple of weeks you can introduce spelt or kamut and see if that is oke. If it is...it will make it much easier for you to cook. You can bake bread from spelt, and most health food shops -at least in Europe, so assume in the USA as well- will sell kamut or spelt pasta.

I've been using spelt flour since last fall. I discovered I had a sensitivity to wheat and had all the symptoms you mentioned. The spelt flour has worked, but even too much of it can start my hives again.

You are right--it is difficult. I have gotten used to eating a lot of rice instead of pasta, but I still serve the kids the pasta. Hmmm....I'm not being very helpful. I guess I just wanted to offer my empathy--I know how hard it is. Hang in there.

Also, there is another company....

Kinnikinnick and most everything I have had from them is really good (the bread is good, the cookies were very good, etc.) They are pricey, but....well, you can eat the food. Always a plus! WholeFoods sometimes carry their items, and you can order directly from them, but they are in Canada, so most people I know place huge orders at a time. But, it is frozen, so it will keep.

I have spent less (and more, too) on food that was just horrible, sometimes inedible (contrary to what their lovely package says about how tasty they are!) So, I would rather spend a little more on Kinnininnick and know it will get eaten, and not just dumped in the garbage.

I had had a blog where I was reviewing wheat-free foods, but I closed it.
