We are planning to go strawberry picking this weekend, HOWEVER....I don't have the canning supplies yet.

Would I ruin the quality of the jam by freezing the strawberries first, getting the supplies, then making the jam at a later time?

I don't think so.. I've often done it that way though usually from lack of time when the strawberries were cheap.

Not at all. But I wouldn't freeze them and then thaw them to make freezer jam. If you are making cooked jam, then it works just fine.

I made jam today. How long are you talking about waiting? A couple of days, or longer? If it were a couple of days, I'd just go ahead and get the stuff, put it in bags in the fridge, and go to town this next week....

If longer, well, you may want to plan on freezing then cooking it and making jam. I made blackberry early this week, and strawberry this morning. MMMMmmmMMMMMMmmm JAMMMMmmmmMMMMM LOL
