Okay--I picked up 15 pounds of locally grown peaches from a farmer in town today. Some are earmarked for preserves. But I'm salivating at the thought of warm peach cobbler...and blueberry...and blackberry...and all the other wonderful things that'll be available this summer.
Care to share your favorite cobbler recipes?

this is the one my grammy always used.. I've used it with whatever fruit I've had and people love it.
Quote:
Grammy's Peach Cobbler
3c. fresh peaches, 1/2c water and 1 cup sugar
OR
3c. canned peaches and syrup
Combine and heat to boiling. Keep hot
2 eggs
1c sugar
1c flour
2T butter
2T milk
1t baking powder
1/2t salt
Beat together the eggs, sugar and butter. When fluffy, add milk, then stir in flour, baking powder and salt. Spread batter in buttered 2x7x11" dish.
Pour hot peaches and syrup over all. Bake at 375 for 25-30 min or until browned.
The batter will raise and you'll have a cake like top with the peaches on the bottom

Oh and you can double it and just use a bigger pan.

I LOVE cobbler and had planned to take my kids peach picking later this summer. I am going to save this cobbler recipe so I'll have it handy then. I've never made cobbler before, but your Grammy's recipe looks so easy I think that even I could do it!

No peaches, here, but I wanted to add this link for Rhubarb Recipes which includes 43 cobbler, fool, crisp, crumble, and crunch recipes. I made the easy and delicious Rhubarb Crunch with my first harvest. Yum!

I have been making a quick cobbler for breakfasts and snacks. It is made in an 8x8 pan which I can cook in the toaster oven (much too hot here for the regular oven).
Melt 1 stick butter in 8x8 pan (I just microwave it or you could melt stovetop)
In a bowl, mix 1 c flour, 1 c white sugar, 1 T baking powder, 3/4 c milk. Mix well and pour on top of hot butter (do not mix into butter).
Layer your fruit on top of this (we have enjoyed peaches and also frozen blueberries).
Sprinkle 1/2 c brown sugar on top.
Bake at 350 degrees for about 40-45 min.

It's not a cobbler, but a crisp and it is soooooo good! We sometimes will have the leftovers for breakfast (if there are any!).
Summer Fruit Crisp
1 C. all purpose flour
3/4 C. plus 2 Tbl. sugar, divided
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 egg, lightly beaten
3 C. sliced fresh peaches
2 C. fresh blueberries
1/4 C. butter or margarine, melted
Preheat oven to 375 degrees. In medium bowl, combine flour, 3/4 C. sugar, baking powder, salt and cinnamon. Add egg and mix with fork until mixture resembles coarse crumbs. Set aside. Place peaches and blueberries in large bowl and toss to coat with the remaining 2 Tbl. sugar. Place fruit mixture in greased 8 or 9 inch square baking pan and sprinkle with crumb mixture. Drizzle with butter. Bake 35-40 minutes or until top is lightly browned. Enjoy warm, cooled or chilled.

My favorite cobbler recipe from my Granny...
Essie's Cobbler
Cream together:
1/4 cup soft butter
1/2 cup sugar
Mix in:
1/2 cup milk
Mix dry ingredients separately:
1 cup flour
2 tsp baking powder
1/2 tsp salt
Then add dry to wet and beat until smooth.
Pour batter into greased 2 quart dish. On top of the batter, spoon about 2 cups of fruit (I add about 1/2 - 1 cup of water or fruit juice to my fruit to make a little syrup). You can sprinkle about 1/4 cup of sugar over the fruit if you want to, I don't usually. Bake at 375 for 45 - 50 minutes. The cobbler will rise to cover the fruit during baking.
Super yummy.
