we are considering stocking the pantry a bit. esp with prices going up so much.

But I'm not sure how to store things like a 50# bag of rice?? I'm thinking I shouldn't just leave it in the bag in the garage b/c of insect and rodents, but I don't want it to get moldy in a plastic bin either??

I buy flour in 25-lb sacks that I put inside a galvanized metal trashcan with a lid (bought new, just for this use ). First I line the can with a clean plastic trash bag. I've done this for a few years now and have never had a problem with molding; it's safe from insects and rodents.

Things like rice that goes really fast over here I just leave as is and just fold the top over or roll it.

Other grains that will be kept for a while I put in the freezer in air-tight bags.

These have been on my list for a while, but I can't say I have a real need for them yet, so I haven't bought any. Serious bakers I know -- the ones that buy 50# or more at a time of unmilled grain -- love them though.

Rice and oatmeal are stored in the freezer in plastic bags or containers (whatever I have available at the time).

I leave raw sugar in the bag, top folded over, in our basement storage area.

I mill my own wheat flour. I keep the wheat grain in 5 gallon buckets with great lids like these. I also have a large supply of popcorn kernels and brown rice being stored in those buckets with the gamma seal lids. It's nice to have multiple colors if you are going to have multiple buckets

We use brand-new diaper pails, lined with garbage bags, and haven't had any problems. Here in Denver, it's so dry that we don't have to worry much about mold ... I think best storage depends on locale ...

if you use the sealable buckets you can store it with oxygen and moisture absorbers.. it's normally not worth the expense if you're going to use it in several months.. we're talkign mainly long term storage.

Rice.. white rice will store for ages in the food storage buckets.. but brown rice will go rancid relatively quickly (months).. so you might want to put brown rice in the freezer or fridge for storage.

We use coolers since they are foodsafe and the insulation seems to help prevent mold or temperature changes. A large Coleman cooler holds two 25 lb bags of flour and three or four five pound bags. We often transfer flour to one or two gallon Ziploc bags, making the contents less bulky and able to stack a little more uniformly. The rectangular shape of a cooler fits better on the floor of our pantry, beneath wire shelving.

We have also used leftover (clean, thoroughly dried) popcorn tins to hold excess bags of flour, etc. You can also get foodsafe five gallon buckets from bakeries, restaurants, grocery deli departments...ask for those that contained less odorous foods, since it's almost impossible to get the smell of pickles, etc. out of them. We have gotten really nice five gallon buckets that held frosting from a local grocery store and have used them for several years.

In our baking cupboard we have rectangular disposable containers that slide in and out very easily and we place opened bags of flour, etc. inside the containers...when flour is already portioned into bags in our cooler storage there's one less step, eliminating filling/refilling canisters.

I have to ditto the PP who mentioned the gamma seal lids. WONDERFUL stuff! They will fit onto the 5 gallon buckets you can get from the grocery deli/bakery departments, and they work wonderfully well!

I keep pasta and rice in the fridge/freezer, flour goes into the fridge/freezer, too. I haven't stocked up on sugar yet, but I likely will soon. I just bought two BIG bags of flour, and have them in the freezer. Lots of pasta too (gave oldest dd a lesson on prices and best values, when we were looking at the per oz/per fl oz prices, lol).

Coffee goes into the freezer, too.

As much storage space as this house has, I wish it had more, lol. Esp with prices going up the way that they are.
