I am stuck. We have had to adios dairy in our house because 3 out of 5 kids have an allergy. Because of that, it is getting really hard to come up with a weekly menu that everyone will enjoy and has a good variety of food. Here is what I have that works now.
Monday - Oven omelet and toast
Tuesday - Baked Italian chicken with green beans and bread
Wednesday - ??? Needs to be a crockpot meal
Thursday - ??? Ideally a meatless and really quick meal
Friday - Leftovers
Saturday - Hamburgers, hot dogs, corn, potato wedges
Sunday - Pot roast or roast chicken

Can anyone help me out with this? Thanks!

For your crockpot day, there's split pea soup, Hoppin' John which is sort of like split pea soup only using black-eyed peas ~ we're cooking ours now and it smells delicious, shredded pork ~ just add your favorite barbeque sauce to a pork roast, shred it in the crock pot after it cooks and serve it on hamburger buns, nacho dip with or without meat, beef burgundy ... can you tell I'm a huge fan of slow cooking?

I would switch Friday's leftovers to Thursday and spend some time fixing a good meatless Friday meal. If you are looking for meatless both days, how about bean and cheese tortillas for a quick Thursday meal? Can't think of anything else off the top of my head ... but if I *do* come up with other things, I'll post again.

We don't do a big meal on Fridays because 4 out of our 5 children spend every Friday night with my parents. "Leftovers" is really just code for "Mom and Dad eat out"! I try to serve a meatless meal at least twice a week to lessen the stress on our grocery budget. It costs me less than 7 dollars to feed 7 people oven omelet and toast!

This has nothing to do with food but I wanted to say that on Saturday nights our oldest 5 stay at my mom and dad's house. I'm glad to see someone else does this too as I've felt guilty about it for years!! My parents bring the kids to mass on Sunday (we all attend the same church).

My kids love this, although they tend to pick around the tomatoes.

Pasta Skillet with Tomatoes and Beans (from Cooking Light way back)

2 tsp olive oil
2 cups chopped tomato (canned is OK in a pinch, fresh is better)
2 garlic cloves, mined
3 cups hot cooked angel hair
1/2 cup chopped fresh basil
1/2 tsp salt
1/4 tsp pepper
15 oz can chickpeas, drained
2 Tbsp balsamic vinegar

heat oil in large skillet over med-high heat. Add tomato and garlic; saute 2 minutes. Add pasta, basil, salt, pepper and chickpeas; cook 2 minutes. Place mixture in bowl and stir in vinegar.

If some people can tolerate grated Asiago cheese, throw that on top at the table.

ETA this goes together very quickly once the pasta is cooked.

We have two, sometimes three, meatless meals a week as well, but our standard days are Wednesday and Friday. On Fridays Catholics are required to go meatless except during the octaves of Easter and Christmas, anyway. Wednesday just offsets Friday nicely.

Many of the bean meals I shared can go with or without meat since beans are so high in protein. There are also many variations of frittata (with zucchini, spinach, tomato, mushroom ... etc.) you can make. I find that the greatest difficulty I have in staying meatless is finding the protein in what I'm making and not over-beaning my family.

This recipe is so easy! It is very easily adaptable to smaller or larger families and to personal taste. I used to put milk and cheese in, but omit them now that we can't have them!

12 large eggs
1 package cooked, chopped bacon (I use Wellshire Farms brand with no nitrates or nitrites)
A couple handfuls of spinach

Throw all that in a bowl or mixer and mix until the eggs are frothy (I use my Kitchenaid for this and it saves my arm!). Put in the oven at 350 or so until done. If you cook in a regular oven it takes about 35-40 minutes, if you have convection it takes about 25-30. Enjoy!

Here's a really easy crock meal of ours...
You put a whole chicken in the crock...you could use just breasts if you like, I usually use a whole one because it's cheaper...and add a packet of taco seasoning or your homemade equivalent and a couple of cans of tomatoes. I think the original recipe called for tomatoes with the green chilies in them, actually, but I don't usually have those on hand. Let cook all day long. Sometime before dinner (I often just do this whenever I get a chance in the late afternoon) dump the whole thing into a strainer and let the chicken cool a little. Then pick the chicken off and use to make tortillas, tacos, or our favorite, taco salads. Easy, easy.

I just fixed a winner of a quick and easy crockpot meal. I put six ~ for a family of nine ~ *frozen* chicken breasts (boneless work best, unless you don't mind deboning later on) in the crockpot with a bottole of Lawry's Lemon Pepper Marinade and a half of a bottle of water drizzled over the top. Toward the end of cook time, I shredded the chicken and put a cornstarch/water combination in the crockpot and cooked on high until it made a nice thick gravy (10-15 minutes, depending upon the consistency you like). We served it over mashed potatoes, but rice or noodles would do well, too. I fixed a salad this morning and saved it in the fridge for a side.

chicken and stuffing is our favorite crockpot meal- spray your crock with Pam (or a Pam -like product) Into the pot dump one large onion minced, several stocks of celery minced and a large bag of stuffing mix. I season ours with garlic and sage. Add skinless, boneless chicken breasts, cut in half (I do one a person) Mix together Pour chicken broth- I use one of those swanson resealable boxes, but cubes would work, until moist.   If you run out of broth, use water to top it off.   Thighs would work too, as would pork loin. Must be boneless- the meat will sort of fall apart and you will never get the bits of bone out of the stuffing(says one who KNOWS) cook on low 8 hours. I serve it with applesauce and a green vegetable.
