I have not baked a Friendship Cake/Bread since my mil was alive. She use to pass the starter to me all the time until she found out that the fermenting had cancer-causing agents in it. Has anyone heard this?

This month my friend gave me the starter and I decided to go ahead and make it since it's been years since we had one...like over five years.

I'm a firm believer in "everything in moderation". I believe too much of anything is a bad thing and I'm suspecting that may be the case with the fermentation process.

Has anyone heard of this? Any hard facts?

Also, what do you all put in your Friendship Cakes/Breads? When my mil made them I remember she put baked apples, nuts, and pineapple in hers. Today I baked two loaves (one to send it dh's office ) and just kept them plain. It's more of a cinnamon cake/bread that way and the family is all loving it. I hope they don't start-in on the other one before dh takes it to work.

We've done oj and cranberries, lemon and blueberries and even cocoa- YUM! I even made a sour dough type bread with the starter.
I've never heard of cancer causing agents with fermenting foods. I've always thought that fermented foods were good for you. I'm interested to follow this post though to see what others have to say.

I would say (without having done super-thorough research) that food fermentation has been around a heck of a lot longer than cancer has been common. I wouldn't worry. We're pretty into Weston Price nutrition and they ferment everything. They would probably say the opposite: natural fermentation will keep you healthy.

This is new to me, Cay. Susan's right -- fermentation has been used for centuries, and recent research supports the fact that fermentation -- in almost anything: grains, veggies, etc. actually increases foods' health benefits. Unless one uses a starter that has gone bad and does not realize it, I don't see where it would have deleterious effects on the body.
