Just thought Id share this little recipe I dreamt up last night and served for dinner.
We are having some tight times financially and I have been making a concerted effort to "eat from the pantry" (and the freezer) as opposed to making big trips to the grocery store every week. So, while we still go to the store for things like milk and fresh fruit and veggies, I have been being extra creative in the kitchen over the past couple of weeks. A can of Campbell's Cream of Mushroom soup (Im not a fan of the canned soups, but my husband buys them out of habit. I think this one had been in the cupboard for over a year.) had been staring me down for a few weeks. I finally used it last night. Here's how:

I took a 2.25 pound pot roast from the freezer (bought during a buy one get one free special) and thawed it. Then I rubbed it down with garlic and salt and pepper and poured a cup of red cooking wine over it. I roasted that in the oven at 325 for a couple of hours.
When that was finished, I took all the juices from the meat, now mixed with the red wine, and added it to the cream of mushroom soup in a pot. I stirred that over medium heat and added two tablespoons of sour cream (a staple at my house).
I served this along with thin slices of the beef over wide flat egg noodles as our main dish. It was really scrumptious!

This sounds yummy. When ground beef is on sale, you can use that too. If you add a little chili sauce, it gives it an extra zing!
