We have a special guest for dinner tomorrow night - coming after our 5pm Sunday mass. I have a 3.5lb eye round roast, fingerling potatoes, baby carrots. I am trying to figure out how to get these into my crockpot to be ready when we get back from Mass - any good recipes?

Sounds lovely! I would seer the roast in olive oil then put it in the crock pot with vegetables. Then put a little water in the frying pan you used to seer the meat. Bring it to a boil just to loosen the meat drippings. Pour that in the crock pot too. Season with a little ground pepper and sea salt (or reg).

You can prep this today and put it in your fridge. I have started the crock pot cooking anywhere from ten in the morning till noon and it turns out well by dinnertime.

I forget the onions and garlic. I always chop an onion and mince a few garlic cloves. It is wonderful but does make your house smell strong when you walk in.

I would do similar to Bridget. A friend brought over roast beef for a new mommy meal and I had to ask her recipe. It was simply kosher salt and pepper over the roast, brown in olive oil. Remove meat, add sliced onion and some crushed garlic cloves, soften a bit, then with 1/2 cup cooking wine loosen the brown bits. Add to crock pot with carrots, celery, potatoes and small amount of beef broth (1/2 cup) and cook 6-8 hours. You can also do this in the oven in a covered roasting pan at 325 for 3 hours.

I used chuck roast, not sure if eye of round will do the same, but dh found it "just like mom's pot roast".

Thanks Bridget and Jenn. I will be doing exactly the above. Bridget - thanks for the tip to start today - I am going to do that.

Our special guest is a seminarian whom my kids love. I prayed for months for a priest that would "connect" with my kids (the priests in our parish are not pro-homeschooling and have no time for kids) - well my prayer was answered with Brother Gregory - he is awesome and cool and is coming to bless our house and my Nick is so excited as he thinks he wants to become a priest and has lots of questions. He is being ordained in May and we are going - our first ordination.

In the past couple of years we have been blessed to have a couple of seminarians in our lives as well. I echo everything you say, Marilyn - it is a blessing, blessing, blessing! We're still a few years out from an ordination but looking very much forward to that.

Don't know anything about cooking with a crockpot

But just wanted to mention that I love some thyme in with a beef roast.. wonderful flavor.

Making a roast with a mix of a packet each of ranch dressing mix, gravy mix, and Italian seasoning mix makes for a very yummy gravy for both the roast and mashed potatoes. Mix the mixes together, and put it evenly on top of the roast. Add a cup or so of water to crockpot.

The other recipe mentioned above is good too. I know you're not making mashed potatoes, but I just really like to have the gravy this one can make with mashed potatoes.

Thank you everyone - dinner was wonderful - came back home after mass (and a very cold day outside) to a lovely smelling house - beef and apple pie. We had an awesome evening with Brother Gregory - he told the kids about how he discerned his vocation, played Holy Traders with them, played pool and board games, wrestled with my (over active) 3 year old - he talked to them about everything from dating to basketball. Nobody wanted him to leave.
