I feel really goofy.

What do you need to do to clean red potatoes? I usually end up peeling regular potatoes. I know many recipes call for leaving the skins on red ones. But what about all the little eye spots???? Even if they don't have actually eyes growing, little red potatoes don't have the smooth skin like larger brown ones....If I peel them, there isn't much left .

I usually use a wash cloth to give them a good rub down and get all the dirt off.

I use a vegetable brush and lots of water...if something is sprouting, then I take a paring knife and cut that small spot out.

Usually the red potato's skin is so tender it doesn't need to be peeled and adds both color and vitamins to the meal. That said, any eyes that are obvious (or hard bits of skin) I'd cut off with a peeler or tip of a paring knife.

Laura I have to admit that I peel them but after i cook them. I have a ton of fillings and potato skins feel like Im eating tinfoil.

The skins slide right off after they are cooked.

So much for the extra vitamins
