What are some good cookbooks that use whole wheat flour? Especially for baking. Can you tell we're on a healthy kick?

I second the Le Leche League cookbook! Use it all the time! I'm going to look into the one's suggested by Stef.

I usually just go ahead and substitute whole wheat flower for white flower in part or in whole in recipes I already have.
Sometimes the results are iffy but they are always edible and usually very tasty. Ive done this with muffins, cookies and pie crusts for years with no disasters.

The only whole wheat book I have is King Arthur Flour Whole Grain Baking. I had expected it to use *only* whole grains, but that's not the case. Still, I really like it. I substitute whole grain wheat flour or whole wheat white flour whenever white flour is used. I also substitute raw sugars for the white and brown sugars. So far, the recipes have turned out great. I like it because it uses oat, barley and other flours, not just wheat.

I was able to borrow this from the library & I have been so pleased! Today I made the "Thin & Crisp Wheat Cookies" on pg. 329 for St. John Bosco's feastday & they were fantastic! Apparently adding orange juice to recipes mellows out the wheat flavor. Well, it worked!

The King Arthur Flour Whole Grain Baking book is awesome! Try the brownies, my hubby and kids loved them!
