Dh went shopping, and came home with a HUGE bag of whole garlic. "It's just like I bought before." "Um, no, dear, that was a bag of 10." "Oh." This is a mesh bag of 25 or 30!!       He was shopping at Sam's this time, v. his trip to the regular grocery store.

I'm worried that it will spoil before I can use it all up. Any suggestions? I was a little more liberal with the taco meat I cooked this afternoon, and can make a big pot of sauce for pasta, but this is a LOT of garlic, and I don't want to waste it.

Okay, I love just roasting garlic and then spreading it on bread. Yum.

I also have a much-loved by my family recipe, called 40 cloves of garlic. Alton Brown from Good Eats has a version of it that is very close to mine. And, we usually use more than 40 cloves, as it is so soft and yummy after it has baked and we all spread it on bread. I serve it with jasmine rice, as the juice from the chicken & garlic tastes really good with rice.

Okay, I think this might be going on this weeks menu now...

I second the roasted garlic spread on bread. DELICIOUS and I could eat a whole head (or 2 ) myself. Make sure to do this on a Friday , so that your dh has 2 days for his skin to stop smelling like it before he has to go to work on Monday.       Sometimes I buy the mesh bag at Sam's just to do this!

We've done the 40 cloves of garlic chicken too! Yummy!

I just place the whole bulb (or two bulbs, or five! ) stem-down in a foil-lined pie plate, drizzle some olive oil and salt over the top, and put it into a 375* oven until the cloves are fork-tender.

Then I wait until it cools a bit (if I can help myself! ), and pull the cloves from the skins with my fingers. Then I just mash up the cloves with a fork, stir in a little more olive oil, and you have a fabulous topping for bread, ready to go!

My mother used to roast garlic all the time when I was growing up, and we used to keep a bit in the fridge to add to cooked pasta, steamed veggies, etc. Yum.

ETA - I usually take a slice off the "top" (opposite the stem side) before adding the olive oil and salt to expose the cloves a bit. It also makes it easier to "peel" the cloves later on.

Before you bake the potatoes, roast a clove of garlic for each baked potato you will make for your family.

After the garlic is cooked, mix cooked garlic with olive oil.

Slice the potatoes in 4ths and add garlic and olive oil mixture.

Wrap in foil and bake the potato.

Serve and hear the accolades.

Thought of another.....

I don't really eat beef ever now, but growing up, we did. My Mom would make an awesome Roast Beef....I know she would use a knife to make holes in the meat, and she would push in whole peeled cloves of garlic into them. She had a peppery crust on the meat too...I could find out exactly what she did... We would all "fight" over those pieces that had the garlic hunks in them....

I'm sorry - I wish I was better at sharing actual recipes . My Mom didn't really use them, and so I learned to cook by watching and by eye-balling most every ingredient, and usually just "winging it" with what I think will be good (or with what I happen to have .)

My mom makes a yummy leg of lamb (usually on Easter) that uses lots of garlic. I looked it up, and some people use whole cloves, she cuts them.

"Peel the garlic and cut each clove in quarters lengthwise. Using a small sharp knife, make incisions all over the leg of lamb. Fill each hole by pushing a piece of garlic into it with your finger."
