My inlaws are coming for New Years. They are both vegetarian, we are not. I am looking for some good meals that are easy and low fat. We usually do lasagna for New Years Eve so that is easy to make vegetarian. My dd is asking for fish tacos and I have a great black bean and rice recipe. That is where it ends though. I gave all my vegetarian cookbooks away in one of my purges, not that I miss them .
Lunch ideas would be good too.

Hummus--chickpea spread should be available at your local grocery store in the refrigerated section.
Lots of salad makings!
Pizza! maybe do half w/meat and half w/out?
Burritos?
Are they into soy? Tofu in various forms (hotdogs, etc.) shd be available.
Also, in the frozen section "Garden burgers" or things of that kind (veg/soy hamburgers)?

oh.. tons of pasta dishes.. it doesn't have to be a heavy sauce.. saute veggies in olive oil and toss with pasta and seasonings.. serve with bread.. it would also be easy to have something like chicken grilled and cut into strips for those not vegetarian.
You can go beyond the black beans and rice too.. if you do burritos it can be a make it yourself.. refriend beans, rice, sauted veggies (excellent on burritos), cheese, salsa, sourcream, meat for those that want..
Stuffed baked potatoes... my favorite combo even though I eat meat is butter, sourcream, cheese and broccoli.. but different veggies, meats, butter, cheese etc for topping your own potato.
Soups!! those are also easy for lunch.. bean soup, veggie soup, potato soup, cream of broccoli, tomato soup (mmmm with grilled cheese sandwiches or quesadillas), minestrone (make with no meat), chili beans (again make with no meat) you can get bullion that has no meat it in but has the general flavor of chicken or beef bullion.. it's great in soups for giving a good flavor.. I never have liked the veggie bullions.. but these are wonderful.

Mary Chris, I am not a vegetarian, but I have some really good cookbooks that can help! How fancy would you like to go? How many meals are you preparing? Do they eat fish? If you want a big list of ideas (I have a good version of fish tacos too, with avocados, mmmm) I can definitely help you. PM or call me if you want.
