How about sharing your favorite cookie recipe?

Here is a new one that we tried out this week and the kids loved!!!

Cranberry Pecan Shortbread Cookies (from the Whole
Foods newsletter)

  • 3 sticks (1 1/2 cups) unsalted butter, softened
  • 1/2 cup sugar
  • 1//4 cup maple syrup
  • 1 tsp. vanilla
  • 3 cups white whole wheat flour
  • 1/2 tsp. salt
  • 1 cup cranberries (we used Craisins)
  • 1 cup pecan pieces, toasted


Mix together butter, sugar and maple syrup with a wooden spoon or in an electric mixer. Add the vanilla and stir to conbine. Add flour one cup at a time, mixing well after each cup is added. Stir in the salt, cranberries and peacans.

Shape dough into tow logs and chill until firm, 1-2 hours

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Cut dough into 1/2 inch slices and arrange on baking sheet. Bake for 18=20 minutes, until lightly browned. Transfer cookies to a cooling rack. Serve warm or at room temperature.

I will have to get my recipes out.

My dh's favorite is a "creamsicle cookie." It sounds gross, you use Tang & white chips, but I made them one year after I read the recipe because I just had to see what they tasted like. I didn't love them, but dh did, and now asks for them (or hints about it ) each year.

My favorite cookie is a good oatmeal one with butterscotch and chocolate chips.

Yum.

Now I need to start planning.

I've lost the recipe for my two favorites.

The Eggnog cookie is easy to find online, but the chocolate thumbprint, rolled in hazelnuts, with caramel (melted & mixed w/ heavy cream) in the middle & drizzled with the melted caramel & melted chocolate.... I WISH I COULD FIND IT!

We made some wonderful ones last night (and another batch this morning (a double batch this time). Butter and Jam Thumbprint cookies, from the FoodTV website. We made them with raspberry jam, and in today's batch, used almond flavoring instead of vanilla...

Mercy. They are gooooooood.
