...with one of my favorite foods: MASHED POTATOES!! Hmmm... I guess this smilie is the closest to licking lips...

I have two pyrex filled with them....still.   

We're making headway on ONE of the pyrex dishes by reheating and serving with leftover turkey (by the way this is food made from Saturday so I could extend the wonderful Thanksgiving comfort food feeling)...

But I think I'll be out of turkey before I even start on the other pyrex of mashed potatoes!! what ELSE can you do with leftover mashed potatoes???

Any ideas? Please? I've never had to deal with leftover mashed potatoes - they're always GONE!!

Well, I have had this problem rarely, only once that I can think of!!


Try mixing with a little egg, grated onion and shape into patties and fry. Simple version of potato pancakes (latkes). Serve with applesauce.

I love potato pancakes. I don't add anything extra, though - I just shape into patties and throw in the pan to brown. Yummmmmmy.

We grill pork chops with some sage rubbed on them. Then add 2 cans of potato soup and some sour cream to simmer with them for 30min. Remove porkchops and add a bit of milk to stretch the gravy mixture.

We love these "Yummy Porkchops"!

My dh and dc love heating up mashed potato and eating it on toast for lunch. Some put a little tomato sauce on it, others some tomato, some a little herbal salt. They make me cook extra just so they can have it the next day.

I serve chili over mashed pototoes, you can alos add the mashed potatoes to a turkey or vegetable soup to thicken it.

Or add chicken (turkey) broth enough to make a soup (thick) throw in chesse and broccoli! Very yummy and very Amish!

Maybe it is an Australian thing, tomato sauce (ketchup) on everything. I have heard of some who put sauce on ice-cream and cornflakes (cereal) but I think that is going to far. I do have a friend (who will remain nameless ) who has sauce sandwiches, sauce and bread that is it!
I'm just happy to have sauce with chips and sausages.

Chill the mashed potatoes, break them into clumps, put them in an omelet along with some sauteed onions and mushrooms.    Serve with tomato sauce or ketchup.

Chop up turkey or ham, mix with mashed potatoes, shape into upside-down cones, roll in bread crumbs and deep fry -- for croquettes. You can also mix in some cream-of-something as a variation. Or serve the cream-of as a gravy. Or serve the croquettes with brown gravy.

Mix with cooked ground meat (pork, beef, veal or combination), seasonings (thyme, oregano, basil), chopped tomatoes and peppers if you like -- spread evenly on Pyrex, topped with either scrambled eggs, cheese, or both. Bake until hot and crusty on top.

Shape into logs, wrap in half a strip of bacon and secure with toothpicks. Bake at 350 degrees F, turning a few times, until bacon is crunchy. (My mom served this on my 16th birthday.)

And Erin -- I'm laughing!! Ketchup makes more sense!! I didn't know that tomato sauce "down under" is synonymous with ketchup!! Yesterday we tried your recipe, but I wasn't brave enough to do sauce -- but we did do ketchup and love it!!

Thanks a lot ladies -- we're having fun trying out all these new recipes with my favorite food!
