Why oh why do I buy a 16lb turkey for 6 people?

The carcass has been made into broth for soup, on the menu tonight is a turkey shepherds pie, there will be lots of turkey sandwiches this weekend and I hope to make turkey tetrazzini for the freezer. What do you make?

We like the hot open-face turkey & gravy sandwiches (on thick bread.)

I also really like to do it a la king style ( I put cranberries & peas into the white sauce...it looks kinda pretty then too, all red and green ). Over biscuits it is yummy.

I like Emeril's Turkey Bone Gumbo

There is also a sub shop here locally that makes the "Bobby" which is a sub roll with mayo, dressing, cranberry sauce, and turkey. SO yummy. Sounds weird, but very tasty.

I used our leftover gravy to make a turkey pot pie today (sauteed celery and carrots, added gravy and some cream, thickened, and added turkey and peas, topped with biscuits). It was a hit and took care of the giblet gravy as well.

Also, I use leftover chicken to make quesadillas (simple, just green onions, tomato, cheese, and meat), and I would imagine that turkey works well, too.

We like to get those crescent rolls. You put in some turkey, a slice of bacon, some cheese and then you roll it up and put it into the oven until the rolls are done. Yum!
