I like to bring a one dish meal. Often, I make brown rice and top it with chicken marsala, then I put green beans (or brocolli if mom's not nursing) around the perimeter. It looks pretty and transports easily.
Tacos are another big hit--everyone can make to suit his or her taste).
I try to think outside the box a bit--honeybaked ham and scalloped potatoes with a green veggie is another that was probably not done three times that week and that leftover ham is always a blessing.
In the summer, my favorite is to make a big green salad in a large shallow bowl.Marinate a flank steak in italian dressing overnight (or use a combination of italian dressing and teriyaki). Grill it in the morning and boil the marinade. Cut the steak into bite-sized pieces and continue to marinate in the fridge. Boil some quartered red potatoes and marinate those in dressing as well. When you are ready to assemble the salad, put the steak in the bottom of the bowl and the potatoes on top of the steak. Cover with spring mix. Add a layer of grated cheese. Sprinkle chopped red peppers on top. Defrost frozen peas under running water and ring the perimeter of the bowl with peas. This looks so pretty and the marinated meat and potatoes are more than enough dressing for the whole salad. My kids are not picky eaters and they love this, but I've noticed that other kids do too. Since it can all be done ahead and assembled quickly, it make great summertime party fare.

On the Thirds please Thursday thread, Janet asked
does anyone have good recipes for COLD dinners with lots of protein. Something that isn't too spicy for little ones but gives some interest for more daring types.
It's 90+ degrees here and will be that at least through Sept. plus very humid, so no one is interested in heavy, hot dinners. I'm not a great cook - still working on that one, so I always get a bit stuck in the summertime.
I am going to try and move some of the recipes from other threads here, but feel free to post more .

I made the steak salad and my family and guests loved it . I had my husband grill tenderloins and it was delish!!!!! We served the steak on the side for my kiddos.
Elizabeth also has a yummy black bean, and corn salsa recipe that I will bug her to post later in the week .
I have a salad cookbook that I am going peruse later and hopefully come back with lots of ideas for hot weather cooking.

I have an unbelievably delicious cold chicken and pasta salad recipe snipped from Taste of Home Magazine several years ago. To this day, friends who tried it at my house years ago will occasionally write me for the recipe. Here it is:
Salad:
5 cups cubed cooked chicken (about 3 whole breasts, preferably grilled for extra flavor)
2 cups green grape halves
1 cup snow peas
2 cups packed torn spinach
2 1/2 cups sliced celery
7 oz. corkscrew pasta
1 jar artichoke hearts, drained and quartered
1/2 large cucumber, sliced
3 green onions with tops, sliced
Dressing:
1/2 cup vegetable oil
1/4 cup sugar
2 tablespoons white wine vinegar
1 teaspoon salt
1/2 teaspoon dried minced onion
1 teaspoon lemon juice
2 tablespoons minced fresh parsley
Combine all ingredients. Pour over salad just before serving.
Garnish with large spinach leaves and orange slices. It is fantastic!

I have to try that one. We had Elizabeth's Steak Salad also and loved it. Our fresh asparagus was already out of season so I had to substitute canned which is a little too mushy for a cold salad.
I use a lot of cold chicken also. Grill ahead of time and have packages in the freezer. Use some Asian dressing and add Sweet and Sour ingredients (green peppers, pineapple, onion, water chestnuts, chopped cashiews, celery, etc.) to cold rinsed pasta. That's it!

I'm back with a new tactic. Yesterday my dh discovered that there is a BBQ show on PBS. I found the website and forwarded it to him at work.
Send your dh to this recipe listand wait for dinner!
