That's a tall order, Nina! Quick, feeds AND pleases everyone?? Is there such a meal?   

Grilled cheese sandwiches are always a hit here...especially when they are made w/ mozzarella cheese and a a little pizza sauce. Then they taste like pizza! The kids call them pizza sandwiches.

Everyone also likes macaroni and cheese...they prefer the kind in the box from the store, but they will eat the from scratch kind, too, which is better for them b/c I make it w/ whole wheat pasta and add eggs and dry milk powder for extra protein. Spaghetti is also a hit. Both these meals can be made in an hour or less. Add a salad for a vegetable and you've got a well-balanced meal!

Ground meat (I usually use turkey, but can be pork, chicken or beef) cooked with chopped eggplant and/or other veggies (cabbage, carrots, peppers, cooked beans, etc.) and seasoned/stir-fried Chinese style -- usually soy sauce, hot chili paste, garlic, ginger, rice wine, sugar, sesame oil, bean paste -- whatever strikes my fancy, everything used "to taste"...

I just throw everything into the pot. Cooks in about 45 minutes

Serve over rice or noodles.

I also do fried rice often enough. With whatever leftover meat or some shrimp or crab. No egg because of allergies. But I used to add 2 or 3.

When really desperate...hot dogs and beans. I keep a few packages of locally made kosher hot dogs in he freezer for such occasions.

Nearly desperate, but with a bit of time...stir fry anything, with (forgive me) Minute rice.

Fried egg sandwiches

Beans and Hamburger (cans of brown beans, cooked hamburger, lot of ketchup and some mustard) served with bread. I don't know why my whole family and extended family like it but they do!

pizza.. homemade cheese pizza can be done in less than an hour

oooh, i forgot -- before we found out about the allergies, i stocked up on ramen noodles. by itself, they're not good for you, but if you add lots of veggies, an egg, some chopped leftover chicken, it's an okay meal. if you make it with frozen homemade stock instead of the seasoning packet, even better.

Pizza of course. But try this:

Layer tomato sauce or salsa, flour tortillas, seasoned taco meat, refried beans or mashed pintos or black beans, shredded cheese, anything else you have on hand like leftover corn, tomatoes, etc. Do a 2nd layer of everyting, top with foil, bake at 375 till bubbly and serve with tortilla chips for dipping. I serve with chopped tomato and lettuce and sour cream for topping.

Pasta, pasta, and pasta.

Betcha can't guess what nationality I am!

Penne tossed with stir fried veggies and topped with fresh, FRESH, parm/romano cheese = pasta primavera

Capellini tossed in gently sauteed garlic oil and topped with good quality parm/romano cheese = pasta olio e aglio.

Our absolute favorite: Fettucine Alfredo. Fettucine and light cream, butter and, of course, parmesan/romano cheese and it is heavenly. Everyone eats this all the time!

Needless to say, if you have an allergy to dairy you will automatically begin wheezing upon entering my home because of the fine particles of parmesan and romano cheese found in our air!

Oh, Mary. It sounds like you and I are A LOT alike. Those are my basic meals, too. I put fresh parmesan on EVERYTHING. My fam just gets sick (believe it or not) of always: pasta! But it is SO EASY.

Nina,

Last night I made homemade mac and cheese and combined it with some cooked ground turkey, onion and zucchini.

Steve was home last night so I made lots and we were all hungry since we'd come home from soccer and park time.

Let's just say, it's a good thing I made lots.

I used 2 packages of 16 oz noodles so guess what we're having for lunch today?

My recipe is really, really easy for mac and cheese so I'll post it a little later. Since we're supposed to get our first rain of the season, I want to get these rascals outside - not to mention, the exercise won't hurt me either!

Chili and bread - or if you're really in a hurry - I've picked up the cooked rice from the Chinese section of the grocery store and combined it with chili...just an idea....

Isabella likes to make bread and she recently made a nice loaf of wheat bread for a dinner with chili....

Can your kids make banana bread so you have a simple snack or breakfast?

I'm just trying to throw out ideas....

Grilled Quesadillas made with leftover veggies and beans and cheeses and chopped meat (sometimes) for the two carnivores in this family.

Grilled pizzas made from a can of pop 'em biscuits rolled really, really thin and tossed on the grill, turn them over after bubbly brown and top with goodies. For St. Francis Dinner last night we did this with jalapeno-stuffed olives (Italian, right?), thin sliced onions (root veg.) and roast fowl (leftover Angelic wings!) sprinkled over tomato sauce.

Husband's favorite quick meal - Brats.

I put many many things in the crockpot...not sure..you are up for the smell all day...my sister used her crockpot at my urging while pregnant and threw up out her front door from the smell (she was getting the mail at the time)...

Do you have a George Foreman grill? I received one last Christmas...easy to use and clean up...best part you can start dinner at the last minute and still eat relatively healthly

I thaw chicken breasts, cut them up bite-sized and stir-fry with an onion. Add one can of chicken broth, a block of cream cheese and add milk until consistency is obtained. Pull off stove and add parmesan cheese. Serve over pasta.
I throw in broccoli many times (or frozen peas) if I am in a real hurry and we can't pass a vegetable around the table

Boiled chicken to throw on a salad - We always have lettuce washed in the refrig (even the bag lettuce will do) and some sort of salad dressing. We often have leftover chicken. If no chicken - we can always use ham.

My dc all love hamburger meat (we buy 10 pound packs and brown it all at once and save some for emergency meals later) mixed with any kind of grated cheese.

Also we generally have a stock of frozen soup vegetables in the freezer - the same hamburger meat thrown in with some tomatoe sauce and water and sprinkled with oregano, basil, thyme and simmered briefly makes instant soup that pleases all. If I have a few more minutes, I throw elbow macaroni in to boil for the last few minutes. But leftover potatoes also go in well.

Mac and Cheese (elbow noodles boiled), sliced velveeta cheese with some milk and butter and put in the oven for a bit (at 350) and then stirred around is a quicky that goes over well. In a crunch, my 8 yo can make it. If you have any leftover ham that can be stirred in as wanted (not all like so we just set it on the table and allow people to add what they want.

Anything on the grill - cause the 11 yo boy begs to cook it .

Deviled Eggs make a great relatively neat and quick snack - and for those that don't like deviled eggs - you can leave a few just boiled.

Tater Tot Casserole. Even the picky one eats it -- however, I don't actually use Tater Tots, I use shredded hash brown potatoes instead (no fat), and I try to get a better cream soup from like Whole Foods instead of Campbells ( but I will use Campbells too). We use ground turkey or ground chicken. I rarely have leftovers when I make this, and teenage daughter (who doesn't eat much) has been known to go back for seconds and thirds.

Oh, I forgot hermit crabs with cheese! Make mac and cheese with medium shells, and add lots of peas. They tuck into the shells like hermit crabs! Great for meatless fridays!

Pasta...and then there's pasta...tortellini with tomato sauce, lasagne (bakes in an hour with the Barilla no-boil noodle sheets, a real help!), carbonara, clam sauce, puttanesca...

One very quick meal is chicken or turkey Marsala (if you cook with spirits). Take very thin cutlets of turkey or chicken, dredge in flour, brown in a bit of butter and then add some Marsala wine (at least 1/4 cup, but we like lots of sauce for our pasta on the side, so I use lots more)...cook up until the sauce is a bit thicker, then serve with cooked pasta, veg. of choice and/or salad...tutto bene!

Actually, several of our favorites aren't quick, but they're easy. Turkey meat loaf (from Southern Living, about 2 decades ago!) is a no-leftover meal, guaranteed. Also, I have a great recipe for Chinese five-spice chicken that goes in the crockpot. That's great for Scout meeting nights. Lentil soup (cheap AND healthy AND vegan!) is popular also. We add a leek to the sautéed veggies you start the soup with.

Another quickie...ground turkey burritos...brown turkey meat, add taco seasoning (we use Penzey's Chicken Taco seasoning, yum!) and a bit of water, cook for 10-15 min. Serve with warmed tortillas, grated cheese, salsa, canned (warm) refried beans, sour cream (plain yogurt for dieters), chopped tomatoes, chopped green onions, black olives...you get the idea. Anything goes. We don't have leftovers when we make this, either.

Breakfast For Dinner (eggs or pancakes or waffles) is highly popular around here. We do this a lot during Lent.

Bummer, I'm hungry again. (We had turkey meatloaf, too!)
