Hey y'all -- since today is Mardi Gras (or "Pancake Day" ), we had regular pancakes for breakfast and I thought to make potato pancakes -- with homemade applesauce and other toppings -- for dinner.

Any great recipes you have?

My grandma used to grate potatoes and a bit of onion (like 3:1) together and just fry them up in oil. She grated them finely, so they were almost batter-like.

We grate the raw potato but then squeeze all the water out in cheese cloth or a towel. Mix in onion and sometimes zucchini and a little flower and egg, salt and pepper.

I will try to find the recipe in time, but I seem to recall having good results with an Emeril recipe or maybe it was from Food Network.

We rarely do it exactly the same way twice, but they are a family favorite!

Funny, as I was going through some of my cookbooks, these Kartoffelpfannkuchen, potato pancakes were in the Lent category, not Fat Tuesday.

Boxty Pancakes are the ones for Shrove Tuesday, Halloween, and St. Brigid's Day.

I haven't made them, but there are several versions I've found on Catholic Culture alone:

Irish Potato Pancakes, another version of the Boxty.

Polish Potato Pancakes

I wish I could join you on the pancake day. If only there was a recipe that didn't have eggs and flour (and milk). It would be neat to do a potato pancake for ds, but I don't have the head or energy to work out all the substitutions. I think the egg is vital.

Thanks y'all. Jenn, the Irish (Boxty) Pancakes sound great; the first recipe needs cooked potatoes, whereas the second keeps them raw; we'll go with the second.

I'll let you know how they turn out!
