Crockpot, freezer-make-aheads, etc....I don't care. I need some new stuff. LOL. We do way too much frozen ready made, fast food, etc. The cheaper the better, of course.    Its easier when the girls are getting hungry-cranky, I'm the only adult in the house (what with DH being deployed), and we've been out and about in the afternoon....

Things that make leftovers are good, and I am always on the look out for recipes for more than 5 or 6 people..between a growing family, and parish potlucks once a month, welllll...lol.

We must all be too busy in the kitchen! Here is our favorite "quick" meal -- marinated chicken. I usually make a mega batch of this and divide and place the raw chicken breasts with the marinade in freezer bags - enough to last us for a few chicken meals for the month. When we go to use it, I thaw it out for dh to grill. This marinade is yummy but I prefer it to be frozen first -- I have tried to marinate with it overnight in the fridge and the taste is not the same.

our favorite easy standby is bean burritos.. if you make your own beams make a triple batch or so and serve the first night as beans in a bowl (top with cheesem serve with cornbread or tortillas etc) then freeze the others and just dump and heat.. mash while stirring to make refried beans for burritos.

beans can be made in a crockpot (I don't do it so don't know how)

and it can be set outside to keep heat out during the summer.

And the beans make a great warming meal in the winter.

a ham bone in it is yummy too.

I do beans in the crockpot, no presoaking necessary (except with Kidney beans) I pour them into the crock rinse, then fill the crock 1 part beans three parts water. I set it on "high" for 8 hours.

I was talking with another lady, and I was mentioning a neat and frugal way of using leftovers, I came across(you don't have to just use leftovers for this). But you bake a large potato for eacy person, then everybody gets to choose a hearty topping. So I thought this was a way to use bits of leftover creamed corn, chili, spaghetti sauce, browned beans, creamed soups, hamburger in gravy, etc.... Or if frugal isn't what you are looking for, you could get a couple of cans of pre-made stuff, heat and serve in bowls for everyone to choose their favourite topping. And maybe a bit of shredded cheese to top?

We are doing lots of beans and rice and Mexican-type casseroles lately.

These are yummy, fairly easy & simple to make bigger batches. The recipe calls for enchilada sauce, but I usually use salsa bc that's always in my pantry. DH prefers it when I think ahead a bit and actually use enchilada sauce.

Chicken Enchiladas

approximately 24 small flour tortillas
3-4 cooked chicken breasts, sliced, shredded or chopped (we grill the chicken after marinating in olive oil, garlic and lime juice)
1/2 cup salsa
1 1/2 lbs shredded Mexican blend cheese
1 small onion chopped fine
1 small can chopped black olives
1 jar enchilda sauce (divided)
1 can cream of chicken soup
1/2 soup can milk
salt & pepper

In large bowl combine half of cheese, chicken, 4-5T of salsa, onion, olives and salt and pepper. Mix well.

Warm the tortillas (stack on wax paper, about 5 at a time for 30-40 sec in microwave)

Grease a 9x13 or larger casserole.

Place 2-3 T of chicken mixture on the tortillas. Roll and place side by side in casserole. (I do seam side down)

Combine cream of chicken soup with 1/2 soup can of milk and 1/2 can enchilada sauce, and rest of salsa. Poour over endchiladas, being sure to get all the edges. Top with remaining cheese and drizzle rest of enchilada sauce over top.

Bake at 350 degrees for 25-30 minutes.

You can cover (carefullly) with an aluminum foil tent and let them sit in the oven until serving time.

Do you like pork chops? Here are a couple of standbys for us.

Pork Chops in Sauerkraut

Cheapest cut of porkchops, I usually make 12-15 at a time
One large jar sauerkraut or 2 cans, really as much as you prefer
1 or 2 onions, sliced into rings
salt and pepper

Layer pork chops, kraut, onions, salt and pepper in large black speckled roasting pan with cover. Cover and bake at 350 for at least 2 1/2 hours. Check about half way through baking and rearrange chops so the bottom ones are on top. That way they all get a chance to be cooking in the juices. If you use less chops, cooking time will be less. I've also put this in the oven at 300 before going to town and when we get home from lessons, it's ready to eat. Serve with green beans, jello and some bread if you have it.

BBQ Pork Chops

Cheapest cut of chops, I make 12 - 15
Favorite bottled or homemade BBQ sauce

Smother chops in sauce. Bake same as above. Rearrange the chops every 45 minutes so the BBQ sauce doesn't burn. Very yummy.
