At bedtime I have been reading to my 5yo dd from the Little House series for a couple of years now (we are on our 3rd pass through them  ). I am thinking that when we finish this pass it might be nice to take a break. We have considered the other LH series, but I would really like to read lives of saints to her. I would love a book or series of books that has lots of saints that could keep us busy for a good long while. I don't want the stories to be too short, maybe on the order of 10 pages or so (or I guess we could read about a couple saints per night). Any suggestions?? Thanks!

We use Saints: A Year in Faith and Art. There is a page for each day, along with beautiful artwork. It is not the 10 pages you are asking for, but would be a gorgeous way to end their day.

The Once Upon a Time Saints series by Ethel Pochocki might be a good fit for bedtime reading to a 5yr old. There are three books Once Upon a Time Saints,More Once Upon a Time Saints and Around the Year Once Upon a Time Saints. The stories do tend to be closer to five pages rather then ten -sample pages can be read through the amazon website.
Heroes of God's Church is written for an somewhat older audience but the stories are around the requested length. Love2learn has the first story here

We like the Once Upon a Time Saints series too.. I only have the first two mentioned.

This is a series of stories about saints and associated animals reprinted by Newmann Press - Saints and Friendly Beasts. They aren't chapter books but easy readers. Still could be a good choice for what you are looking for.
Also just recently got this book form our seminary library. It's older and OOP but reads well for a read aloud so good if you can find it. What's nice is it is stories not just a biography of the saint. The Saint of the Week by Sr. Verona Murray. It has 30 saints I think (school year  ) and each story is between 5-8 pages.

We've also really enjoyed the recently back in print Dujarie Press series - In the Footsteps of the Saints. There are 20 back in print and they are all very, very good. They fit your requirements perfectly.
In addition to the Saints and Friendly Beasts series that Mary recommended, Neumann Press has reprinted several other wonderful books on saints. They're all printed on lovely creme paper, hardcover, and illustrated with nice black and white images. They're listed here. They're actually kind of long reads...too long for one sitting for us, so they'd fit your requirement nicely. You could probably read one book in 3 days.

I agree on the "Once Upon a Time Saints", although I've found the newer Around the Year is a little bit older reading than the Once Upon.. and More Once Upon...
Out-of-print options, look for these authors and books:
Saints in Seasons for Children by Ethel Marbach Pockocki which is a collection of her books written under name Ethel Marbach:
ĄSaints Budding Everywhere
ĄSaints for the Journey
ĄSaints in Waiting
ĄSaints at Harvest-Time
Joan Windham's various saint Stories (Sixty Saints for Girls, Sixty Saints for Boys, and many other series)
Hugh Ross Williamson also has a few saints collections which are very readable (Young People's Book of Saints, Children's Book of Saints)
The two authors above have a little British touch in their stories, but they are wonderfully captivating.
Fifty-Seven Saints by Daughters of St. Paul (older edition)
Faces of Courage also printed by Daughters, can't remember the author.
I have the Saint of the Week that MaryM mentioned, but also another one by another Murray, Desmond Murray, OP.
Recently I found Saints: Adventures in Courage by Mary O'Neill. It's a larger hardback written in 1963, with 52 stories, each over 2 pages, with lovely illustrations by Alex Ross.

I was going to mention the very same individual biographies, Jen! I think some of Neumann's overlap the Dujarie series reprints (as in some are the same). Or am I off on there?

I was going to recommend the Neumann Press Dujarie reprints too, they are beautiful!
Joan Windham Sixty Saints for Girls are short fun saint stories. She also has one for boys.

You're right, Jenn. So, for example, any of the Neumann Press books written by Brother Ernest, C.S.C. would be the same as the Dujarie Press books.

I popped into a local Catholic shop today and found out that Sophia reprinted Young People's Book of Saints! 
And they have reprinted another book I forgot to mention here (although I've talked about it before), Golden Legend of Young Saints by Henri Daniel-Rops.
Finally Sophia's title of their reprint is the same as the original book!
