I was wondering which Saints could be used with this costume?

Well, since it's a cassock with cardinal's colors it could be used for any Cardinal Saints - most notably St. Robert Bellarmine or St. Charles Borromeo.

I was a little confused when I looked at the picture though, and wonder if there is some confusion or mistaken identity - there are two John Newman/Neumanns who were holy clerics - one is a saint and one is venerable, one was a cardinal and one was a bishop. Red would indicate a cardinal and St. John Neumann wasn't a cardinal. I also wondered if the colors for the hierarchy were different at that time, so did a little searching.

Saint John Nepocumene Neumann (1811-1860) was a bishop in Philadephia, not a cardinal. Therefore I would expect him to be depicted it the pinkish purple zucchetto, cloak, and sash that bishops wear.

But I found that "amaranth red is used for Patriarchs, Archbishops, Bishops. This violet color has only been the official episcopal color since 1867, when Pius IX replaced the black zucchetto of bishops, the color previously common to all clerics below the rank of Cardinal."

So St. John Neumann would have been a bishop before the amaranth red/violet, therefore should have worn black. Red would only be for cardinals. But I see many of the images depicting St. John Newman online that do look more red than purple, but technically this wouldn't be accurate.

Ven. John Henry Newman (1801-1890) was a cardinal in England. As a cardinal he would wear the red as pictured in the costume. And if you look at his images online you will find them in red cardinal's colors.
