With the two latest things coming out from the Holy Father of late, I have had several friends (Catholic and not) ask me many questions about the faith. I'd love to be able to direct them to a holy, accurate website or two that they can peruse at their leisure.

Does anyone have any good recommendations?

Catholic Answers is amazing, I've never run into a question that can't be answered there.

Also, the Catholic Encyclopedia is great.

And Scripture Catholic is wonderful, too, particularly for the non-Catholics who ask "where in the Bible is that?" about every tradition of the Faith. It's also great for longtime Catholics to brush up.

Another good site to have on hand about Catholics and the Bible is the daily readings schedule, so that inquirers can see just how much Bible reading Catholics actually do.

(The Bishops also have a podcast of the daily readings, which is nice just to have for your own family's use)

This last link is a PDF document for a pamphlet showing how the Mass is laid out in the Scriptures. It has to be printed out for easy reading, but is very thorough. The entire site has more of these available on a WIDE range of topics you might find helpful.
