For next year, we'll be studying ancient history, and I'm wondering if there are any artists or composers from those time periods? If there are none, who are some of the oldest artists/composers? I am hoping to study 6 of each.

Finding ancient artists by name and studying a cross-section of their works is going to be extremely difficult.
One thing you could do would be to study specific works/cycles of work. For example, China's Terra Cotta Warriors, the Elgin Marbles from ancient Greece, or the ancient Greek and Roman statues in today's Vatican Museum. I'm not up to speed on ancient India or the Middle East, but I'm hoping other parents will be able to contribute some ideas.

If you're looking to add art history into historical times, I highly recommend the book Cave Paintings to Picasso by Henry Sayre. The book discusses the history of art beginning with the oldest example of art and continuing through the modern era. For each work of art, the book discusses the work in the context of the time in which the work was created. As a result, it is a great book to use along with studying an historical time period. There won't be six examples of each time period but I haven't found it too difficult to use the information in the book to locate additional works/authors.

I have another suggestion for you - Learning About Ancient Civilizations through Art.
I have not used this book but is recommended in The Well Trained Mind for art appreciation and I have had several friends use it and they love it.

We are going to be studying the Ancients next year for history and I want to solidify our other content subjects under this era as well. I have been wondering how I am going to find out the art and the music. Thank you so much for helping me out with this.
