Our homeschool group is doing a "trip around the world" get-together. Each family has a different country and sets up a table. I have the Philippines, but I have no idea where to go with this. Any ideas?

My dh's dad was from the Phillipines, and we still have family there. So we have wonderful Filipino food at family gatherings from time to time.
Pan cit is wonderful, and feeds a crew, lumpia (Filipino egg rolls) is great, and easier probably (less messy), but takes some work to make.
We love adobo (chicken and/or pork with a marinade of soy sauce, vinegar, pepper, and garlic).
Tinikling is a fun game that your kids could learn and show, and other kids could try. And it wouldn't be too difficult if you do it slowly.

Don't forget our Filipino saint, St. Lorenzo Ruiz. Although he had a Chinese father and a Filipino mother, he grew up in Manila and studied with the Dominicans in the early 1600's. He was martyred in Japan in 1637.

There's a short blurb about St. Lorenzo Ruiz and his companions in Saints for Young Readers for Every Day Volume 2 published by Pauline Books and Media; you can also find it here. His feastday is September 28.
Here's a quick recipe for lumpiang shanghai (mini spring rolls):
Mix one pound ground pork (or turkey if you want, pork's more authentic), 1/2 pound minced peeled shrimp, 1/2 cup minced jicama (you can use water chestnuts if you can't find jicama, this is mostly for crunch, and i really don't like the tinny flavor of canned water chestnuts but some people choose to use them), 1 egg, a couple of tbsps soy sauce or to taste, several grinds of black pepper, a tablespoon of brown sugar, a large clove of garlic crushed into a paste with a pinch of salt, 1/4 cup minced carrots, 1/2 cup chopped green onions (both green tops and white bottoms okay). Wrap a couple of tablespoons of the mix in a square spring roll wrapper, rolling it up into a thin cylinder (about 1/2 inch in diameter. Cut into 3-inch pieces if using 9-inch square wrappers, or 4-inch pieces if using 8-inch wrappers). (If you can at all avoid using the wrappers found in supermarkets, please do. You will not be able to get the crunch that lumpiang shanghai is supposed to have. This can only be achieved by using spring roll wrappers available at asian stores, the only ingredients being wheat flour and water (usually); some still have egg in them but they are made differently from those available at the regular grocery store. Wei-chuan is a good brand; you'll find various spring roll wrappers in the freezer section.) Deep fry the pieces over medium heat, turning frequently, until golden brown and thoroughly cooked, about 8 minutes total. Drain on paper towels, and serve with a dipping sauce. Favorite sauces are sweet and sour (hot or not), or banana ketchup (Jufran brand), or that Thai dipping sauce for roast chicken (the one with chilies), or a simple sauce of vinegar and crushed garlic.
i'll try to post a recipe for pancit sometime, and rice muffins too.
tinikling is actually a native dance, as is singkil -- both danced with the use of bamboo. two people hold two bamboo poles on the floor (or on bamboo rests (kinda like giant chopstick rests)) and the rhythm goes tap-tap (poles apart) - close, tap-tap-close, tap-tap-close. when it's on "tap" the dancers' feet (toes) are hopping/dancing in between the bamboos, then they swiftly hop out/dance out when the bamboo poles close. quite tricky but lots of fun.
singkil comes from the southern regions. (One version of) The story goes that a muslim chief becomes sick, and only the blood of the harimanok/sarimanok (some kind of mystical chicken) can cure him. The Christian prince catches the sarimanok, cures the chief and marries his daughter, the princess (and presumably they are converted to Christianity).
