Sorry for another similar post...
When we do phonics, we try to think of words that start with the sound of the letter...
C.
"Cup, Cat, Corn...Kitten!" Well...yes, it does have the same sound, but it is not the same letter.
How on earth do you explain that to a beginning writing/reader? There is no logic to that one at all.
Silly English. Let's all go back to Latin.

If there is an i,e, or y after a C it usually says "s", right?

At this stage (which is our current stage, and our first time at it, so take this fwiw) I've just been saying exactly what you said, "Well, yes, it does start with 'cuh' but its letter is 'kay'."
I don't try to make it logical

I just don't know how to explain the difference between a "k" beginning word and a "c" beginning word...because it is the same sound...kwim? There aren't rules for that one...it's just a...I don't know...sight word thing? You just "know" when to use k?

Aha! That's my problem! I'm trying to be logical with a 4yo.
Silly, "logical" home schooling family.
I'm just teasing. Your post made me laugh. I am still grinning about it. 
But I think you are right...we'll just work with that. I just wanted to make sure I wasn't teaching something wrong...or missing something. First-timer with reading, here.

We just always talk about "curly cuh" (c) and "Kicking cuh" (k) and our son just accepts it. What he finds bizarre is words like stick or rock that have both sorts of cuh but only one cuh sound.

Yes. All About Spelling says so.
CK comes after a short vowel, too.

Right, I've always told my beginning readers that rule and I would teach them more about it later. If there is a c before kitten it would read "sitten".
Teaching reading at home has the rule: ck two letter K, used only after a single vowel that says a,e,i,o,u. (all short sounds) I always liked the spelling rules, they remind me of the catechism questions they memorize, they don't always understand them at first, but the understanding will come later.
