What items do you keep on hand for spontaneous picnics? And would you mind sharing your typical picnic. I know Elizabeth visits the bluebells annually, many of you make treks into the woods or journey to the seaside. I am looking for ideas of what to take along for lunch. Some places we go require carrying everything long distances, some places we park near where we would eat. What yummy things do you keep on hand or prepare for this season of moveable feasts?

Easiest take-alongs for us that we usually have on hand for grab-and-go are fruit, yogurt, string cheese, granola bars, raisins, gorp, PBJ, boiled eggs, tuna pouches, carrot sticks, and a jug of lemonade. If I know ahead of time I'm going, then I will often make a batch of pasta salad.

This summer I have been making submarine sandwhiches. I buy the two packs of french bread at Costco slice it down the middle and fill it with deli meats. My kiddos all like different meats and cheeses but the sandwich is big enough that I can make everyone happy. We also do string cheese, crackers and cheese, fruit and I have been buying granola bars and small bags of chips or chex mix.

French bread, a nice cheese, grapes and fruit juice make for a simple, delicious impromptu picnic. We like to keep pretzels and string cheese on hand for light "traveling" snacks. Sun tea, with a touch of lemon along with peanut butter and honey sandwiches makes a fast, yummy picnic lunch! For a fun, easy-to-carry variation on the PB & J theme...roll slices of bread with a rolling pin until flattened into a thin "crust", add thin layers of peanut butter and jelly of honey, then roll it all up...Voila, PB Roll-ups!
We "tailgate" after Mass many Sundays, since it's an hour away, and one family favorite is chicken salad, in sandwiches or on crackers. Mandarin oranges, diced watermelon, yogurt, or three-bean salad are all nice additions if you're looking for easy-to-prepare-and-serve meals. Serve in small cups if carrying or juggling plates is not possible. If you're hiking or walking a long distance consider individually packed lunches for each family member to carry...brown bags are just fine. There are disposable serving size containers that are ideal for such times...we wash and re-use them over and over! Remember to bring along a trash bag if you venture along a "path less chosen". The food is not nearly as important as the company and the blessed times you share with one another! If Mom is better able to enjoy the day because she hasn't been too stressed with elaborate meal preparations, all the better!

Michelle, This year we made up a Summer Fun Bag to keep in the car full of stuff I always forget (bug spray, knife) and stuff I think would be fun to have along (bubbles and playing cards) but never remember to grab before we left on an adventure. I keep it in the trunk and now I just have to grab chilled drinks and the perishable food and we're set!
It works great, when we delivered a 50' catamaran I just grabbed it and threw it on deck and we had cookies and sunscreen and colored pencils...
