My herb garden (my second year at this) is already producing an abundance of oregano, mint and parsley. I have a question. Do you rinse the plants immediately before drying them out. Some of them seem to get a bit limp and mushy. Any ideas?

I'm wondering the same thing. This is my first year, and I'm growing lemon balm, catnip, lavendar. I'd like to know if I'm just supposed to pick the leaves?

I just found this site that talks about drying herbs.
There's also a video at Bulk herb store that explains some other things too, if you're interested. It has drying herbs, making tinctures and oils, etc.

eta: It came back to me! YES, you do rinse them, b/c you never know if...your dog got there before you!!!

eta again: apparently, you should rinse only if necessary. you don't want them wet when you start drying, so be sure to pat dry.
