Ds was reading Big woods and just asked me if we could make Johnny cakes flavored with cracklins. Would the Johnny cakes be more like a baked cornbread or cornmeal pancakes?

In the Little House Cookbook there are recipes for cracklings and cornbread. It sounds like Johnny cake seasoned with cracklings.

Theresa,

Johnny Cakes (which tradition says is "journey cakes" slurred) seems to be cornbread that the Southerners carried when they traveled around(thus, journey cake). Cracklins is pork fat browned in a hot frying pan and the lard squeezed out (and the lard saved for other uses).

Bottom line -- you could make these things from scratch or (since you are in the South!) just run to the store, pick up a bag of pork rinds and a Jiffy cornbread mix and let him have at it....
