I was thinking of adding a few Montessori manipulatives for under the tree...fun ones but useful, that can be used for a long time.
Ds is only 3, and we haven't really "done" any math. He knows his numbers, can count, also doing simple addition in everyday situations by himself -- counts how many people are around the table, or in the car, how many Skittles. Sometimes subtraction.
Any suggestions for this age?

Silly, but my ds enjoyed the colored bears. He still does at 9!

My little ones have always enjoyed linking cubes and pattern blocks. My oldest began to play with these manipulatives at 3 or 4 and still enjoys them at 11.

We have and like a bucket of Pattern blocks like Katherine suggests and a couple of books to go with it.
I also like this set of Pattern blocks from Melissa and Doug, especially for the youngers.

One of my daughters was endlessly entertained by a bag of mixed nuts in their shells. No kidding. She sorted them by type, size, texture (rough/smooth), shape. She took the separated groups and matched them up with one another in a one-to-one correspondence which helped her understand the idea of larger and smaller numbers. She would ask for the basket, saying, "May I please have my nut work?"; I loved the expression "nut work".

Is there any resource or book that explains the "what" and "how" I would be teaching by using these manipulitives? Would I just be exposing him to pattern, or is there a purpouse that I should be making sure he "gets?"

My almost 3 year old loves the following Math manipulatives (sorry but I am having trouble with links again)
- Lauri Number Play foam puzzles set (helps him relate that 5 is 5 objects)
- The colored bears - he loves to sort them into their colors, count them etc (I have a simple set from Target - but Learning Resources does a great set Mama, Papa and Baby bear which can later be used for size and weight work)
- PLAN toys geometric sorters - we have two different types
- Learning Resources big tub of Mini Motors counters - he loves to sort by type of vehicle and color
- TANGRAMS - he is just getting into easier puzzles
- Mighty Mind (age 3+) - which is kind of like puzzle blocks with pattern cards
- wooden number peg puzzle with objects under the puzzle piece
- wooden blocks
All the above have been used by 3 kids before and are still in great condition.
