Don't ya' just love fall?

...That time of year when it's just right for hot soup and fresh bread at lunch and then again for dinner? I've spent the last few dreary days of rain pulling out all the fall food recipes and we've been cooking up a storm! I even got really creative and made two new soups this week: Great Northern Soup (beans and sausage) and one I'm calling Vegetable "Stew." We had a chili dog fest tonight and the boys and I made caramel corn to snack on this week. We bought a half bushel of different kinds of apples at an orchard today and I think there will be hot applesause in the crockpot sometime tomorrow...

Did I mention that the 6yo wants to make pumpkin pancakes for breakfast in the morning?

So what's cookin' at your house?

Ya' know, I think it's because we've been listening to Farmer Boy by Laura Ingalls Wilder on CD and there is so much talk about FOOD in this book!! And everything sounds so yummy! We can't listen on an empty stomach...it's just too much to bear! AND lately I can't believe what my husband and my boys can put away, food-wise. We're tall people, so I guess it has to go somewhere...

We are still enjoying apples from the orchard. The pears from the wild pear tree are almost ripe enough to eat. There are still a few purple hull peas, some okra, and jalapenos left in the garden. So what we can't eat is going in the freezer. Our weather here is still warm, but looks like cooler days are on the way which has me thinking about soup. I did try a new bread recipe yesterday which did not turn out to be light and fluffy like I had hoped. So I made bread pudding with one of the loaves which was a great hit, especially with dh . Ds will be home this weekend from college so we will have to have southern fried chicken (however unhealthy!), mashed potatoes, apple pie, spaghetti and meatballs, and caramel brownies--all his favorites. Actually, most all of our favorites!
Looking ahead to All Saints Day, as tradition dictates, we will have pumpkin fudge --(which will also be something easy to mail to to our boys in college).

We've been making pumpkin apple dip here. So easy and so good!

1/2 cup pumpkin
1/2 cup brown sugar
6 oz cream cheese
2 teas maple syrup
1 teas cinnamon

Beat it all together and chill for 1/2 an hour.

Serve with apple slices for dipping.

Here is the recipe for pumpkin fudge:
Pumpkin Fudge

3 cups sugar
¾ cup melted butter
2/3 cup evaporated milk
½ cup canned pumpkin
2 T corn syrup
1 t pumpkin pie spice (can substitute all or part with cinnamon)
1 (12-ounce) package white chocolate morsels
1 (7-ounce) jar marshmallow crème
1 cup chopped pecans
1 t vanilla extract

Stir together first 6 ingredients in a 3 ½ quart saucepan over medium-high heat, and cook, stirring constantly, until mixture comes to a boil. Cook, stirring constantly, until a candy thermometer registers 234 degrees (soft-ball stage) or for about 12 minutes.

Remove pan from heat; stir in remaining ingredients until well blended. Pour into a greased 13X9X2 pan. Let stand 2 hours or until completely cool; cut fudge into squares.
