Hi.
I just organized our big ol' pantry closet, and I have more beans than I know what to do with. Cans of beans, dried beans, white, kidney, pinto, red, black, northern, garbanzo, split peas, lentils. Beyond chili, what can I do with all these beans? I would love some meatless meal ideas for Fridays, but if you have ANY bean recipes even with meat, could you please, please share them?

A family we are friends with uses pinto beans by putting them in a crockpot with a bunch of water for around 10hrs.(I think?)
They then mash them up and use them in their tortillas instead of taco meat. They will also mash them up and put butter/salt/pepper on them. Their family of 10 loves them!

Have you tried the Bean Bible?
My dh and I just spent time reading and laughing over some of the recipes. My favorite is Hart Stilwell's Frontier Baked Beans if yer lookin' fer a receipt that'll put hair on yer chest, look no further! Bile up a pot of Navies, toss in some strong black coffee and stronger Bourbon
Can't you just see an old Western Cowboy stirring up a pot of these?
They have recipes for chilis, soups, main dishes, salads, crockpots, baked beans and even a dip or two!

You could make your own bean soup mix by mixing up all your dried beans. Then, make a mixed bean soup. First soak a cup or so of your beans overnight (or quick soak them by boiling for 2 min., then cover and soak for 1 hr.). Then, add chopped onion, carrots, garlic, a can of diced tomatoes, salt, pepper, and chili powder to taste and cook until beans and veggies are tender. You can also add 1 cup of chopped ham.
Middle Eastern Lentil Soup
1 C. lentils
4 C. water
1/2 t. cumin
Bring to boil and simmer for 30-45 min., or until lentils are soft. Add more water if neccessary.
Heat 1 T. olive oil in a skillet. Add 1 chopped onion and 1 minced clove of garlic and saute until yellow. Blend in 1 T. flour, cook a few more minutes. Add sauteed ingredients to lentils and bring soup to boiling point, stirring occasionally. After soup boils, remove from heat and stir in 2 T. lemon juice and salt and pepper to taste. I serve this w/ cornbread for complete protein. My 7yod begs me to make this.
Lentil-Rice Stew
Saute in large pan:
1/4 C. butter or oil
3/4 C. chopped celery
3/4 C. chopped onion
Add:
6 C. water
3/4 C. lentils
Cook 20 minutes and add:
2 can diced tomatoes
3/4 C. brown rice
2 t. salt
1/4 t. pepper
1/2 t. rosemary
1/2 t. garlic salt
Simmer 45-60 min. Add:
1/2 C. shredded carrots
Cook 5 min. and serve.
You can leave out the celery and corrots and it's still really good. Freezes well.
Red Beans and Rice
1 lb. red beans
Soak beans overnight (or quick soak). Bring to boil w/ 6 C. water. Add 1 C. chopped onion, 2-3 cloves of minced garlic, 1 t. salt, and 1/4 t. (or more!) red pepper. Add a ham bone or pork hock if you have it. Cook until beans are tender. When beans are tender, add 2 C. chopped sausage (the fully cooked kind) or ham. Remove the ham bone or pork hock, chop up any meat on the bone and add to beans. Simmer until a thick gravy forms. Serve w/ rice. I LOVE this dish b/c it requires minimal prep time and smells sooooo good while it's cooking.
Green Gumbo
3-4 diced potatoes
1 chopped onion
1 chopped bell pepper
1 can great northern beans
1 lb. sausage (the fully cooked kind) or 1-2 c. chopped ham
some chicken broth (1 or 2 cups?)
Salt and pepper to taste
Combine in a crockpt. Cook on high for 4-5 hrs, on low for about 8 hrs. Add 1 can of turnip greens or an equivalent amount of frozen turnip greens and cook on high for 30 min. more. Serve over rice. Good w/ cornbread, too.
Refried Beans
Cook 1 lb. of pinto beans until tender. Mash them up in their cooking liquid w/ some fat (1/4 C. or so of bacon drippings is especially good ) When beans are mashed to your liking and fat is absorbed, let them simmer until they are as thick as you want them. Add salt to taste and eat on tortillas w/ shredded cheese. Or, add 1 or 2 C. to 1 lb. of ground beef for taco or burrito filling.
You can cook and freeze beans in 1-2 C. portions then they're easy to add to chili or tacos or burritos.

Do you have the book Saving Dinner? Almost every week she has a been dish and we have loved all of them (except for my 9 yo who would not come within a mile of a bean :-) )

Wow, Dawn, I'm inspired!
Laura, we're in the same boat! I just organized my pantry and unearthed many a can and bags o' beans too! We did Red Reans and Rice in the crockpot last week (Dawn's recipe looks yummy!) along with a Vegetable Stew (Throw whatever veggies you have on hand into a huge pot with 1 large conatiner of your favorite spaghetti sauce and an equal amount of water. I used everything left-over like potatoes, carrots, garlic cloves, onion, cabbage, 1 cup barley oats, frozen baby limas & corn, beans from the pantry...I can't remember what else!! I also threw in a pack of bacon cut into little pieces and added some cream at the end 'cause we like creamy soups best...yeah, I know, there goes "Healthy Choice" but you could go without the bacon and cream for a healthier alternative)
We had Chili tonight (just a basic recipe with ground beef, onion, green pepper, 1 can each of baked beans, black beans, kidney beans, some frozen corn from the farm, diced tomatoes & chili powder) and I tried my luck with creating what I call "Great Northern Soup" which is now dh's favorite soup... And I must warn you that we save eggs and pancakes and pasta and such for our meatless meals. My dh is tall and skinny and therefore has a terrible bias against any soup that doesn't have meat in it and any dessert that doesn't have chocolate in it (but that's another story! ) Anyway, in my huge soup pot I browned 2 pkgs. of breakfast link sausage, cut up into bite-sized pieces along with 1 onion, chopped. I drained the fat, added 3 cans of beef broth, 4 cans of Great Northern Beans (drained and rinsed). Bring to boil. Add 1 bag of fresh kale, chopped, and 1/2 cup whipping cream. Little salt and pepper and that's it. My dh loved it and so did our boys.
