Usually I make a cookie selection that I package and give as gifts to neighbors etc. This year I am thinking of making a single item and giving the same thing to everyone. I have never made fudge before - but I was thinking of something like a peppermint fudge?
Please would you share recipes for a good "make in bulk" Christmas treat which is fairly easy to make and not too extravagant.
We cannot do peanuts or treenuts.

Granola is great for that. You can make a yummy one with or with out seeds. You can even make a bulk batch and just add nuts, seeds, fruit, as people are able to eat them. I give this in mason jars tied with a bow.
Candy cane bark is also so easy to make in bulk and looks so pretty in little tins.

Kristie, what is candy cane bark?
ETA: Marilyn, I'm so sorry, I didn't see your note about not being able to use peanuts when I posted the recipe below. I'm leaving it in case someone else can use the recipe. Good luck in your search!
We've been giving these away as long as I can remember:
Super easy, absolutely delicious, peanut clusters.
Melt together:
1 12 oz. pkg semi-sweet chocolate chips
1 12 oz. pkg butterscotch chips
(I use Nestle, for consistent quality sake)
Remove from stove and add:
1 cup peanut butter (We use smooth, but crunchy might be interesting. I usually use Jif, but have used other brands.)
Stir in:
1 lb. Spanish peanuts, with the skins. The best we've found are Planters Redskin in cans (They're only 12.5 oz. so I add an extra can for every triple batch.)
Drop by the teaspoon on wax or parchment paper for free form clusters or fill small candy cups. Refrigerate.
We give these out at dh's and ds's work places. Ds recently announced that employees have already started mentioning them, in anticipation of the upcoming Christmas season. They're so simple to make, it feels like cheating ~ but, everyone looks forward to them every year!

Not what you asked for, but I am thinking of using either of these ideas for Christmas gifts.
Paperwhites I use a lot of canned tomatoes, so I thought I could use the cans somehow instead of mason jars.

Peppermint hot chocolate mix :) With homemade or store-bought marshmallows!! If you're making the marshmallow yourself, put the peppermint IN the marshmallow. Sooo yummy. It does get pricey though depending on what you put in the hot chocolate mix. Powdered milk is not cheap.

I make mini-fruit cakes to give out. According to feedback (and the ever increasing number my hubby wants me to make) they're pretty good.
Of course, that just might be due to the fact that I pour a fair amount of orange brandy over them before aging them.
On a more general note, I've found quick breads to be a good go-to for such gifts.
A quick google search yields plenty of recipes for any type you can think of (chocolate, pumpkin, lemon, egg-nog .....), they're generally easy to make and normally freeze well. It's also easy to either increase the recipe or use mini-loaf pans.
And they look nice wrapped in foil with perhaps a bow or ribbon on top.

Well the flip side for me is that by the time I get it all together it's nearer to Epiphany than Christmas and people are so "sweeted out" from the goodies starting at Thanksgiving (most of ours wait for the Christmas season) that I've found a nice loaf of homemade bread is fairly easy, pretty cheap and really well received. If I want to boost the gift I can add a small jar of homemade jam or some seasoned butter or such.

My favorite is quick breads that my Mom, Servant2theKing, makes to give away, with Bishop's Bread being probably my favorite. It's sooooo yummy, chocolate, with chocolate chips and marachino cherries. It's making me hungry for it now! My second favorite is probably Pumpkin Bread.

This peppermint bark from epicurious is awesome. I've been making it for years and people ask for it now!

I also make Rasberry Chocolate Crumb Barseach year for the cookie exchanges I participate in. VERY easy to make, makes a 9x13 and you can cut them fairly small because they are so rich.
