I would love to hear what you are cooking and eating. Through the school year I have been really well planned with meals. But now that summer vacation is here, I have no plans, and just cannot seem to get a menu together. I am trying to find light and healthy recipes for dinners. Also ideas for picnics - to just quickly pack for an impromptu walk. For breakfast, I need high protein as I have 3 children working who leave early and who need a good breakfast.

Jen has a great recipe for fajitas on her blog - which is on my meal plan. Other ideas I have are:

1. Taco salad - fix your own

2. quiche

3. Meatball subs

4. Rice salad

5. black bean and vegetable stuffed tortillas

6. Rice salad

7. Pasta bake with chicken sausage and peppers

8. white chicken enchiladas

I am trying to get some recipes for a lot of smoothies and healthy cold drinks too. Our standard breakfast smoothie is kefir with blueberries, strawberries and pineapple.

We make our own popsicles with black grape juice or peach juice.

Do you make your own kefir Marilyn??

I haven't thought about meal plans at all yet- I work at our local farmer's market so life is packed right now.

Beans- big old pot of pinto beans- either done Georgian style (the eastern European Georgia) with coriander and pepper, or with chilli spices. I figured if I made it one day we could have it another day with burritos.

Fish burgers- we had some great salmon ones from Costco- time saving for work days.

Smoothies- we need to have some new recipes!

Kid dinners- I want to get our kids on the rotation again- who knows what their menu choices will be!

Pizza- my dream of an outdoor pizza oven is definitely way down the list, and turning on the oven that hot in a Manitoba summer is dreadful! But we love homemade pizza!


I love the idea taco salad!

I love the suggestions...we have one child who won't eat fish (they are her peeps - future marine biologist), and a hungry young man home for the summer (who also does not eat fish). Keep those cards and letters coming, folks!

Kristie you can cook pizza on a grill.

And cook that pot of beans on a porch or something in an electric roaster or crock pot. We use mexican seasonings in ours.. onion, oregano, cumin, salt.

Salads can be made with lots of things.. put some grilled chicken or fish on it to make it a meal.

Cook a ham in that roaster outside.. and it'll make all kinds of meals.. chef salad, sandwiches, omelets

oh omelets are a nice summer meals.. all the summer veggies are a nice addition and they cook pretty fast. I cook them in 2 12 inch cast iron pans (each pan is 2 servings) so I can make 3-4 batches of omelets.. most people will make a great many fewer

I also like using the rice cooker outside and then some sliced grilled meats on top.. with some grilled or sauteed veggies (fast cooking) makes a nice meal.

You can also bake potatoes in an electric roaster.. and do stuffed baked potatoes. I find these are great made with leftovers as toppings.

pork roast in the crock pot with bbq sauce and cook it down to pulled pork and serve on rolls (or hamburger buns).. yummy with coleslaw.. easy easy to make since you start it early and the coleslaw can be made whenever.

Kristie - I do make my own kefir. I have been making it since September and I really believe that it has helped keep us healthy. I purchased grains from Cultures for Health and they did well. I make a breakfast smoothie with frozen blueberries, pineapple and strawberries. If I have some left over I make kefir pancakes.

Thanks everyone for the ideas. Omelets are going on my list. We have a child with severe fish/seafood allergy - so we never have fish.

I love the beans idea. Please give me some tips on how to cook them in the crockpot. Do you put the spices and herbs in at the beginning or after they are cooked? I have to stop using canned beans.

I need to think about making my own pizza. The dough is so easy in the kitchen aid. Maybe "make your own pizza" night - I used to do this a couple of years ago. I made dough, and then set out bowls of red onions, veggies, chicken, ground beef, olives, shredded cheese, pepperoni etc - and everyone made their own. The favorite was bbq sauce, red onion and chicken! I like "white" pizza as I cannot do tomatoes.

We had a "bonfire" last night in honor of St. John the Baptist Eve, and we roasted hot dogs. It was a very simple meal but much appreciated. We decided we needed to do it more often!

Lindsay that's another place where those beans mentioned come in handy. The kids love making hotdogs.. others of us get tired of hotdogs.. BUT CHILI dogs are another story

Don't add the tomatoes or salt when you cook the beans- add them once the beans are soft. Both the salt and tomatoes harden the skins!

We add generous salt and pepper, then either coriander or regular taco type spices. We also serve them plain with salsa.

Omlettes- I forgot about them. We get eggs from a friend and rely heavily on them!

Becky - I use this recipe sometimes with variations. It is a favorite here - for lunches or light dinners in the summer. In our house it is called "Father Zyg Rice" because it was liked by one of our favorite priests who would often come over for a meal, before he moved.
