We just found a pink foamy tube like thing growing in the backyard. When we poked it with a stick, it fell over, was hollow & stunk, I mean really stunk.

Could be a stink horn, which is a kind of fungus. Did it look a bit like a mushroom without a cap?

Jenny, I was looking up an odd mushroom we found today in the Handbook of Nature Study when I saw this about Stinkhorns and had to share it with you:

"To give a nature-study lesson on the stinkhorn is quite out of the question, for the odor of these strange growths is so nauseating that even to come near to one of them in the garden is a disagreeable experience. The reason for mentioning them at all is because of the impression made by them that most mushrooms are ill smelling, which is a slander."

I remember hiking in Joyce Kilmer National Forest awhile back and coming across a particularly pungent stinkhorn. Before we saw it we were sure there was a dead animal nearby as that is exactly what it smelled like. We were prepared for the worst and when we finally saw it we were so surprised! It is a particularly effective dispersal strategy because the thing was covered in flies who I'm sure were convinced they were on a dead animal. Truly gross and truly fascinating at the same time.
