What do you do when you've forgotten to defrost the meat for dinner and it's 5:00?
My go-to last minute dinner idea is scrambled eggs. I almost always have eggs in the refrigerator and I can make them fast!

Omelets feel more satisfying for my family.. scrambled eggs are only "eh".
I can almost always do burritos or tacos. We always cook the hamburger from frozen anyway.
I can also plunk some frozen bl/sl chicken into a pot to thaw it and then cut it up and make a chicken gravy for over rice or biscuits or such.
biscuits and sausage gravy is another breakfast my family likes for dinner.
and if I have bacon pancakes and bacon is well recieved. I cook the bacon in the oven and can cook it from frozen that way too.

The local Mexican place? Probably not what you were looking for... Actually, we only do that if there are no leftovers, which we usually have, and can supplement with things like
-PB&J
-soba noodles with peanut-teriyaki sauce (2 parts teriyaki:1 part peanut butter)
-summer sausage and cheese on crackers with fruit

This sounds crazy, but fish, rice and broccoli! I always have frozen fish in the freezer. It thaws in minutes under cold water. The less adulterated the more my dc enjoy it, so I simply bake it plain! Rice and frozen broccoli. Quick healthy. Few complaints.

This made me laugh - this is my go to meal as well, except I'll do frozen peas or green beans instead of the broccoli.
Other ones:
Nachos with cheese and black beans and whatever is laying around (olives, onion, tomatoes, salsa, etc.) and a smoothie.
Pasta w/ marinara sauce (I always keep jars in the pantry for easy pasta and pizza sauce), salad or frozen veg
Pancakes and bacon (frozen fruit on top if we have any left)
Huevos Rancheros on corn tortilla (scrambled or fried) same toppings as nachos. My son calls them "breakfast burritos" and made some for lunch for us today - another one of those "what should we have for lunch?" days.
Really, when I think about it, I keep lots of mexican food ingredients around, so I have lots of combinations to go off of. I always keep lots of corn tortillas, salsa, guacamole, cheese and all that hanging about. When I am out of cheese, though....

Great ideas! I rely way too much on my microwave for defrosting meat. When we redo our kitchen we've decided to get rid of the microwave so I wont have that option any more.
We occasionally do bean tostadas or Mexican lasagna using just beans.
I have also used canned chicken in a chicken noodle soup or casserole. My family isn't big on it but it's good to have when there is nothing else available. Other than that, pizza is a hit.

Frozen boneless skinless chicken breasts on a cookie sheet with sliced onions, red pepper strips and broccoli (both frozen), drizzle with olive oil, add salt and pepper, thyme and whatever else looks good and bake at 400 for 20-25 minutes. Often I top it with mozzarella cheese when it comes out of the oven and then pop it back in for a few minutes until it's melted.
Tostados--taco shells broken in half topped with refried beans and cheddar cheese and baked until heated through and cheese melted.

Breakfast foods like scrambled eggs toast and fruit, baked potato quiche & muffins, or French toast and breakfast meat always go over well in our household!
I like to keep boneless, skinless chicken breasts or tenders, and tubes of ground turkey on hand for dinners in a jiffy. Boneless, skinless chicken tenders cook much faster than breasts and are easier to cut while frozen. A tube of ground turkey thaws in less than half an hour in a pitcher of hot water (changing the water once or twice).
It's really helpful to prep meats or other meal ingredients and freeze them. Diced green pepper and onion keep very well and are super simple to prep. It's just as easy to prep double or triple amounts when you're making a meal and pop the extras in a bag or container.
Desperation Dinners was a favorite feature in a local newspaper years ago ~ I still use some of their recipes. It turns out they now have this website!

Frittatas - simpler than an omelette and a great way to use up leftover meats and random veggies and cheeses.

Whenever I make a pasta dish, I cook a pound of beef or turkey and a pound of Italian sausage. This blend is our favorite for all things Italian. So, it's two or 2.5 pounds of meat. We only use half of it and I freeze the other half. Then I can whip up a pasta dish with noodles, meat and sauce (I'm known to throw cottage cheese in there if I have it) in about 15-20 minutes if needed for an easy meal.
Pancakes are another standby.
And Taco Soup (the postpartum dish I most frequently bring to mothers.) is always well received and can cook in about 20 minutes.
Brown a pound of hamburger or ground turkey. Season as you would for tacos. Add:
1 can tomato sauce
1 can diced tomatoes (we like Italian blend)
2 cans of black or kidney beans (or mix)
1 can corn (I use frozen corn)
Bring to a simmer. Add a cup or two of water if you want it thinner or to make it stretch. (This recipe feeds 2 adults and 5 kids aged 11 and under). Serve over tortilla chips with cheese! (Add plain yogurt and avocado on top if you like... mmm)

Lately, a standby meal has been ham and potatoes. I dice a ham steak, dice potatoes, and toss with olive oil and mustard. A full steak and about twelve potatoes took about 2/3 c oil with a half cup of prepared mustard. Salt and pepper. Baked covered st 375 for snout sn hour. The cooking time is longer, but the inital prep work gors quiickly. Then, at the end, I will add frozen peas if I have them.
It is very loosey goosey but popular.

Pancakes....vegan pancakes without egg, we are allergic...but they are filling, and my kids really, really notice a difference with the coconut oil that I use now....more depth, really good!
