We are having a seminarian to the house for the first time. The only time he could come is about after Sunday Mass. I want to have a home-cooked meal since he's far from home (Columbia), but I will have 1hr. to cook, max. I can prep in the early AM, though. There's no way we can go to a different Mass other than our usual 8:30 because I made a commitment long ago to pass out flyers.

Soooo, it looks like 10:00, I'll arrive home, and 10:30-11:00, he'll get to the house--hungry, no doubt!

Quiche? I could have fresh fruit already cut.

With something like that I'd do what my kids call breakfast pizza. It's a layer of shredded frozen potatoes (2lb bag I think) in a 9x13 topped with a pound of breakfast sausage browned (or chopped ham or bacon cut into bits or whatever, can even leave the meat out), covered with 12-18 scrambled eggs.. at this point you can refrigerate it, then when you get home you just put it in the over to bake at 350 and cook it until the eggs are done.. it's less than an hour but I'm not sure on the exact time.. then you top it with shredded cheese and let that melt and serve. We like it with toast and fresh fruit.
