Some of our favorites, off the top of my head and after only one cup of coffee:

The Bronze Bow, Elizabeth George Speare
City of the Golden House, Madeleine Polland
The Eagle of the Ninth, Rosemary Sutcliff (mature-ish, but my 4th-grade boy read and loved it this year)
Brendan the Navigator, Jean Fritz
Augustine Came to Kent/Barbara Willard
Son of Charlemagne, Barbara Willard
Beorn the Proud, Madeleine Polland

eta: this is a more or less chronological list, by the way, taking you from the time of Christ through the 900s.

You can do King Arthur stories in that time frame, too -- though the legends really flourished later, historians have speculated that the "real" Arthur was a Celtic chieftain resisting Saxon invasions as the Romans were withdrawing from Britain.

You might look at stories of saints in that time frame, too -- so many to choose from! The Louis de Wohl saint novels are really more high-school reads, but stories of Augustine of Hippo, Benedict, Boniface . . . you could do a whole chronology of saints from the earliest Church through its first millennium.
