So, here comes Holy Week. What goodies are you baking for Easter?
Dh is already asking for the Pascha Cheese Mold.
I'll make an Easter Lamb Cake and cupcakes or a lamb cake that is wheat, egg, and dairy free for my son. Probably cupcakes.
Last year I made Easter Sweet Bread and a Paska Bread, but I used a different recipe (note to self--post this recipe).
Anyway, the bread is sooo tasty, especially with the sweet cheese, but I felt so miserable after eating it. I really don't tolerate wheat very well.
I'm looking for a gluten free substitute that would be good for spreading on top. I won't try to go eggless and dairyless, this would selfishly be just for me. And it doesn't need to be "pretty" like the Easter breads, just a bread pan would be fine.
Has anyone found such a doable gluten free bread? The above breads are mild, only some citrus and cinnamon tastes, nothing overpowering.

we'll do hot cross buns, cheese cake, kolacky, butter horns, a braided bread loaf, normally I'd do a pound cake but I promised a girl or two that they could attempt to make angel food cake instead.
Sounds like a lot but I have a lot of help.. if I get to make one or two items that will be a lot... my older kids keep "stealing" them (to make).

I should add that it just needs to be wheat free. I can tolerate gluten in different forms.

I don't recall the brand but I've heard there are some good gluten free baking mixes out there. That might be easier than a complicated recipe at least for just the occational item.
Have you tried the sprouted wheat bread? if it's wheat that bothers you, I've heard that the sprouted wheat breads eliminate something that some people are reacting to.

Tried this one, Jenn, for Easter. Meant to make hot cross buns, but people got sick, so made it pretty much according to the recipe, with only minor modifications. It was VERY GOOD.

I ended up using the Pioneer Woman's recipe for connamon rolls except using Namaste brand Biscuits, Piecrusts, and more mix and eliminating her additons of baking powder. I'm not sure if my measurements were off or what, but at first, it was too sticky, and I ended up using the full bag for her (large) recipe, and it was perfect. A very good sweet bread, and I was even able to manipulate well enough to make monkey bread easily, so I think I could have braided it, twisted it, etc..., like a traditional sweet bread. I didn't roll for the cinnamon rolls, I smooshed, but I probably could have rolled with wax paper on top.

Oh.. my daughter's angel food cake was INCREDIBLE. I mean if you've only had store bought cakes, you'd think it wasn't worth the effort.. but this was.. wow.. definately lives up to it's name
But there's so little flour in it.. mostly egg whites.. that it might be converted to gluten free fairly easily.
