We are trying to move towards a more vegetarian diet-at least until dh has his bloodwork done for life insurance
A few practical questions-
What do vegetarians use the freezer for? Beans and flours? Meat and leftovers are in there now
How do you fill a teenage boy? Poor guy just wants a burger. He seems to need that protein. We eat dinner and he raids the kitchen after. Not sure he can take this path with us
Just a few burning questions as we try out this new lifestyle.

I was a vegetarian for years.
Yes, the freezer was filled with beans and flours, but I also stored lots of frozen veggies and fruits.
It's really, really important that your teenage boy gets enough protein. If he likes smoothies you can make him a high protein one and serve it with his meals. Protein powders are available at stores for this purpose.
Peanut butter too.
But honestly, I don't know if I would go that route with a teenage boy unless there was some serious need for it. At that age they need not just the protein, but all the other nutrients that are only found in red meat.
If it's hard on your husband to see your ds eat meat when he can't, maybe you could serve your ds a meal with meat for lunch and breakfast and just let him eat vegetarian for dinner? (That of course, only works if your husband works out of the home during the day.)

depends on how vegatiarian you're going.. if you use cheese.. shredded cheese can be frozen allowing you to buy when it's cheapest. You'll definately want to put fruits and veggies in your freezer so that again you can buy when they're cheap and have to eat over a longer period of time For instance, strawberries are just coming out again after winter... in the next month or so they'll hit their cheapest and then start to go back up in cost, so while you can get them, you have to pay almost double what you'll see in a few weeks.

And frozen they can be blended into smoothies or used as a toppings and things like that.
