I have about 6 bricks of cream cheese in my fridge right now, Where did they all come from?

Anyway- how can I use them up? Any favorite recipes?
Cheese cake is good.... but what else??

I think I once made a similar plea here, except for sour cream - because I had a couple of those Costco sized tubs...

Anyway, back to cream cheese...this doesn't take a ton of cream cheese, but it does use some.

Twice baked potatoes - I just bake the potatoes, cut in half, scoop out flesh. With electric mixer, mix in cream cheese to taste, (a bit of milk and butter, too - but mostly cream cheese) until fluffy. Spoon back into skin and top with grated cheese. Reheat in oven.

Before you go worrying about using it up... you might want to check the dates on it.. they can be good for quite a long time from purchase.

Cheese balls for holiday snacking are great.

kolacky cookies use a dough made with butter and cream cheese.

nut cups (like mini pecan pies but not so sticky) use cream cheese in the crust as well

matter of fact I've started to look for a good sale on cream cheese just for those reasons (mainly the cheese ball and nut cups)

We like it for lunch: on toast, topped with a layer of pumpkin butter.

I add it to mashed potatoes.

My son likes it mixed with Harry and David's Pepper and Onion Relish, eaten with chips. I think he would eat that every day of the week if I let him. Luckily for him, he has a grandma who frequents Harry and David and indulges his habit. I think it would be good with regular salsa, too.

My dh loves honey walnut cream cheese on bagels, but the kids don't, and dh has been traveling a lot lately for work.

I wonder if a cheese ball would go over well at one of our homeschooling pot lucks... sadly, the group here is not cheese cake friendly. I have a great recipe for mini cheese cakes but last time I took a batch only my family ate them. A couple of other people ate them, too, but most of the group didn't even try them. That did make my kids really happy, though- lots to take home.

Cream cheese bread, muffins... looking into these options as well.

Here's a recipe with Nutella.       

Others add apricot or fig preserves.

All the recipes I found online have you divide the dough into 4 parts, yielding 32 cookies.

My recipe divides it into 9 disks, which yields 72 cookies. They are small, but I appreciate having a recipe that yields so many.

My kids love the cheese ball.. and some of them can be picky.. another option is a jalepeno jelly pour over the top of the brick of cream cheese.. served with crackers.. I also like a green tomato salsa over the top of the cream cheese served with corn chips (the scoops.. they're heavy enough to scoop the cream cheese without crumbling)

We blend it with a little raw honey or brown sugar, a pinch of sea salt, cocoa, vanilla, and sometimes add in toasted nuts or nut extract(like almond or walnut), an sometimes add in a little butter to make it more spreadable and use it as a dip or spread...or....just eat it out of the bowl with a spoon! (Truth be told it is better that way, anyway I call it my crust-less cheesecake...haha!

Frosting for graham crackers or vanilla wafers:
8 oz cream cheese, soften & cream with mixer; then add 1/2 c white sugar, cream together with mixer.
Add: 1/2 c. melted chocolate chips, 1/2 t. vanilla, and 2 Tablespoons milk. Mix with mixer. Spread on graham crackers or vanilla wafers. (Or eat with spoon - it happens here! )

I like the salsa, cream cheese and tortilla chips too. Or hot pepper jelly over cream cheese with wheat crackers.

Oh, forgot about the pickle roll-ups. We like them with ham. And they are low-carb!

And I'm with ya: too much cream cheese? Impossible! (Seriously, when I saw the topic, I was picturing gallons of cream cheese. 6 bricks is no big deal here!)

I made a chicken artichoke spinach dip that has a brick of cream cheese in it. So yummy! Let's see - I put a bunch of chicken breast tenderloins, chopped up, in a crockpot (I eyeball everything, so I'm not sure how much - usually about 10-12 tenderloins), cook on low for 4 hours. Then add the cream cheese, a bunch of parmesean cheese, about a 15oz jar of artichoke hearts (chopped), and a box of defrosted, chopped spinach, well drained. Mix well, and let it cook another half hour or so. Top with some mozzarella if you like, and it can be eaten alone, or scooped up with chips, crackers, or sliced veggies.

:: 3 - 8 oz. cream cheese
:: 2 onions cut up (some people saute them beforehand, but i don't think it's nec.)
:: 1/2 cup mayo
:: 1 cup parmesan cheese

Mix it all up in a bowl and put in the oven until hot and bubbly!

MY FAVORITE DIP OF ALL TIMES! And, truth be told, it's my favorite lunch and breakfast as well!   

Two Sundays ago, this was my dietary intake:

:: 1 cup of coffee
:: 1 donut
:: 1 beer
:: onion dip and tortilla chips

What a GREAT DAY!

Oop thought of another.. GARLIC BITES you mix lots of fresh minced garlic (not the jarred stuff - no bite to it) into the cream cheese.. spread it on tortillas... roll up and refrigerate to "harden" them up.. then slice in spirals to serve
