Most people I know have been happy with the Betty Crocker GF Cake Mixes. My mom has celiac and has tried for years to make a good GF cake from scratch. Now she just buys the mix.

Namaste brand gluten-free mixes are the very best cake from a mix I've ever had--gluten-free or not. I just bought a case of 6 off of Amazon for a better price than the hfs.

There are also a lot of "flourless" chocolate cake recipes that are very good (I think I made a Martha Stewart recipe) but more like a torte than something you might use to make cupcakes. A flourless chocolate cake packs in the chocolate flavor, if that is what you are after, and there are no tricky alternative flours or funny ingredients to navigate.
