Help! A dear friend is having her hip replaced in January, and she's asked me to make some freezer meals for her...it's just the two of them, husband and wife. She can't have any deep green veggies, and she is on a low-salt diet. There are no other restrictions.

My problem is...I only know how to cook for 4+ people, and I never freeze anything! I know I can cook for four and divide the recipe in half, but I'm hoping that some of you wise ladies have some recipes for four that freeze well (or even for eight; I can do kitchen math).

Thanks in advance for any tips, recipes, "Avoid this!" comments, reheating suggestions, etc.

pastas, lasagna freeze great. i always add a little extra sauce though because it seems to dry up.

stuffed peppers, chicken stir fry, chicken pot pie, tacos, enchilada bake, bbq pork samdwiches, roast beef

I think if I were you I would make a couple big batches of a few soups and freeze those. just figure out the appropriate size container to freeze it in and you're set. maybe also freeze some bread or bread dough.

unless you are the only one providing meals for a few days in a row. then maybe a soup, a pasta and a chicken meal or something.

good luck! how blessed they are to have you help out after surgery!

oh, and you could always offer to stop by with a fresh meal once or twice. hot meals are easier and they dont have to do the heating up. may be good for the first day or 2 she is home

Yes, doing the math, I would make 50% more than you normally would and take out two servings. You've got dinner for your family and the extra meal for 2 . Many meals are freezable - pastas and casseroles being good choices. Soup/stew is also a really good option.

I have a favorite freezable meal - Chicken Scampi - but not really a recipe for it, as at this point I make it by sight/taste and not sure I can give an accurate amount for 6 servings. I'll work on that.

And you might consider just making your meals for 4 so that they have the meal and then enough leftover for another meal.

Here is the original recipe for Chicken Scampi (Creme de Colorado cookbook):

1/2 cup butter
1/4 cup olive oil
1/4 cup finely chopped green onions
1 TBSP minced garlic
juice of 1 lemon
2 lbs. chicken breasts, boned, skined and cut into 1/2 inch pieces
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 cup minced fresh parsley
1 tomato, chopped
buttered noodles or cooked rice

Makes 4-6 servings.

In a skillet, heat together butter and olive oil and saute green onions and garlic. Add lemon juice, chicken, salt, pepper and parley. Continue cooking, stirring constantly for 5-8 minutes or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice.

I have modified it to our family's tastes and ingredients. I use 1 heaping Tablespoon of tomato paste (instead of the chopped tomatoes) and add it at the beginning with the lemon juice so it mixes in. I cube the chicken instead of cutting into strips. And I use dried parsley - and much less since it is dried , not fresh. Probably 1 1/2 Tablespoons. And I don't do the salt or pepper. We serve it over spinach fettucini.

You can freeze meatloaf in muffin tins. That would probably be a good way to do a number of things so that they could control their portions and just thaw what they needed.

I thought these crockpot freezer meals looked good if they have a smaller sized crockpot and you could divide them up. I keep meaning to try this, but I haven't yet.
