We are still new at being gluten free. I'm really quite boring with rice and French fries and other various potatoes.

Anyone got any other yummy ideas? Popular ways to make rice and potatoes at your house would be appreciated too

grilled zucchini (or other summer squash) brush with oil and sprinkle with seasoning.. I like a bit of salt, rosemary and garlic pwd.

speghetti squash.. you can serve it like speghetti noodles.. or just put butter on it.. very yummy.

corn bread.. I've made it using masa (corn flour, not meal) instead of flour and it comes out just fine. Someone was just saying they really like corn bread made as muffins with cut up hotdogs in them.

something different for potatoes is hot potato salad.. made just like regular mayo based potato salad but my grammy would cut up hotdogs to mix in and bake it until hot through. I remember it being yummy.. I don't have enough people here who like potato salad to bother

there's rice salads like you can make pasta and potato salads too.. I like a rice side dish made with spicy breakfast sausage browned with chopped up onions and bell peppers and then the rice mixed in.

some of it will just be getting used to the different foods.. I used to rarely make rice until I had a child that LOVED it.. and so I started making it in place of potatoes or pasta.. it's great with fried chicken and gravy.. or for stroganoff and the like.

stir fried rice can be made as a main dish or as a side.. chopped up veggies only tends to make it more a side dish and if you add scrambled eggs and meat it becomes a main dish.

Cold bean salads are good in the summer. You can soak and cook or use beans straight out of the can. I've been making a black-bean salad with chopped onion, banana peppers, and corn (I toss in a handful of frozen, and by the time we eat, it's thawed and the salad is cold), tossed with grated cheddar cheese and a dressing of plain yogurt. If I have cilantro, I put that in, too; otherwise just a dash of chili powder. I took this salad to a celiac friend's house on the Fourth of July, and she was delighted to have something on her potluck table that she could actually eat.

Oh my goodness I am so sick of rice! Definitely in need of ideas here, but I'll share what I can think of.
We almost always have a simple salad as a side. Just arugula or spring mix and tomatoes tossed with olive oil and garlic/salt/pepper. Quick and easy.
In addition:
Boiled eggs.
Pineapple chunks.
Corn on the cob.
sweet potatoes-cut in chunks,tossed in olive oil and salt and roasted.
zucchini/yellow squash sauteed in olive oil and oregano.
Tomato/cucumber salad (chunks or slices)
Rice noodles
bean salad (aka Texas caviar)
corn bread (the kids LOVE this)

We've been predominately grain free for over 6 months now, sharing our Autumn Dinner menu as I seem to have written over my summer menu.

Chicken Breast and Vegies. (I don't roll the chicken in anything just fry in the frypan)
Beef & broccoli stir fry. (No pasta LOTS of vegies)
Baked Dinner
Fish & Vegies
Shepherds Pie
Barbie and Vegies
Chips (takeaway)

*Vegies vary and are presented in various ways. ie potatoes in jackets, mashed potatoes.

Some potato ideas we regularly eat;

Mashed Potatoes
Potatoes in jackets
'Mr Spud'. (baked whole potatoes topped with diced salads, sour cream and cheese)
Potato Bake, (layers of potato, ham and cream)
Chips
Hasselback Potato (baked potato, slice length ways, and then cut 3/4 through every couple of centre-metres, sprinkled on top with cheese)
Baked Potatoes
Potato Salad

Have you tried polenta? We eat it as a main course with veggies or as a side dish. There are a variety of ways to serve polenta, just like with pasta and rice.

Since my 3 youngest were diagnosed with celiac disease I have tried out polenta "sweet". It is kind of like cream of wheat, but instead of wheat, corn. We really like it. We pretend that we are sitting in the high grass of the prairie and eating our corn mash like Laura and Mary.
Then of course we have to sweeten it all with maple syrup!

Potatoes with their skins on. You can buy pre-washed or scrub them yourself.
