I harvested 18 lbs of cucumbers from my garden last night. Apparently cucumbers grow a lot better in long, hot summers than in cool, short summers. Who knew?
Anyway, not everyone in my family likes pickles. What else can I do with cucumbers other than slicing them raw?

My family really likes this Apple Relish (that has cucumber as well). We've been getting cucumbers from our CSA, and in an attempt to get everything used, I've been multiplying this recipe for the number of cucumbers I've been getting and mixing it up quickly.
I've also cooked a chicken breast and chopped it and distributed it among the bowls for some added protein to make it a lunch. Very simple and tasty.
For relish:
1 apple, peeled, cored and chopped
1 cucumber, peeled and chopped
¼ onion, finely chopped
1 Tablespoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon brown sugar

We have the same issue. Here are some of the things we're trying:
Tzatzkiki Sauce for pita bread sandwiches;
Cucumber salads, although sour cream-based cucumber salads turn out not to be popular at my house...

My kids love cucumbers, wish I had your problem .
We just finished reading the chapter on Melons and their Cousins in Seed Babies by Margaret Morley and it mentioned how the little boys cut the cucumber in half (long ways), then gutted the inside and ended up with the bottom hollowed part of a sail boat. They put a stick and cloth for sail and then went to the pond with it. You can guess the look of AHA in my boys, the thought had never occurred to them.
Sorry, I'm sure that's not what your looking to do with them, but how timing to bring up cucumbers .

I'm don't know if there are any where you live, but here, there are many free lunch programs that would love to take fresh veggies off anyone's hands.
Aside from that or setting them in a box with "free" over it at your curb, I'm no more help than suggesting a google search for cucumber recipes. Personally, I love cucumbers in my taco salad. And, I know you said not everyone likes pickles in your home, but one of my friend's loves to put her cut up cucumbers in an empty, but with the pickle juice still in there, pickle jar. In just a day, she says it's almost like the pickles she enjoyed back in "the olden days."

Oh, I almost forgot! Last summer, we had SO many, and bacon cucumber and tomato sandwiches are really yummy!

Yes, Stacy's right. Our food banks here are starting to charge people for fresh veggies because food costs have gone up so much...which means the people who most need to eat more veggies and fruits can't afford to. If you have plenty to spare, I am sure your food bank would be grateful for the donation.

I love cucumber sandwiches. I slice them and put them on a pita with either a yogurt based sauce (with dill and lemon juice) or with some hummus.
Have you tried cucumber soup? This is really good, but there are tons of recipes online with less ingredients. I know I have made one from Cooking Light that was really good. I can't find that one right now, but this one looks good.
Our family also loves the cucumber, tomato and red onion salad with italian dressing. Super yummy with hamburgers!
Or you could just send my family some cucumbers. My kids LOVE them and we eat 1-2 per day on a normal day here!!!!!

My kids love eating them sliced and dipped in ranch dressing (or plain)
obvious, but- add to your salad
slice with onions and pour a mayo/apple cider vinegar dressing over it. Delish!
Cucumber sandwich- with cream cheese and you can add tomato, lettuce or bacon
add to a pasta salad with grape tomatoes, Italian dressing and celery salt
My favorite- a bread salad/panzanella. Sooo yummy! Find a recipe online! Very yummy!
Tzatziki sauce- grilled chicken or steak on pitas (fresh pita bread is divine) with lettuce, tomatoes, cuc slices and tzatziki sauce
there's many other cucumber salad recipes out there- some use yogurt and or sour cream. Some use sugar. I'm sure googling or checking allrecipes will come up with many varieties

My Cucumber and Couscous Salad was a hit with the family this Easter!
I hope you don't mind me sharing it with you.
CUCUMBER AND COUSCOUS SALAD
1 cup boiling water
1 cup plain couscous
1 T olive oil
1/4 t salt
2 cups chopped English cucumber (with peel)
1 cup coarsely grated zucchini (with peel)
2/3 cups chopped pitted dates
1/2 cup chopped green onion
1 T chopped fresh mint
CHILI DRESSING
1/4 cup olive oil
2 T white wine vinegar
1 T liquid honey
1/2 t chili powder
1/4 t salt
1/8 t pepper
Combine first 4 ingredients in large heatproof bowl. Let stand, covered, for 5 minutes. Fluff with fork.
Add next 5 ingredients. Toss.
CHILI DRESSING: Combine all 6 ingredients in jar with tight-fitting lid. Shake well. Makes about 1/2 cup dressing. Drizzle over salad. Toss until coated ( I use it all). Makes about 8 cups.

Raita, to serve with curry. (cucumber + yogurt + garlic + mint + lemon juice + salt)
Cucumber Water -- cucumber slices + water + lemon slices
Asian Quick Pickles = cucumber + rice vinegar + sugar + salt -- serve with an Asian beef stir fry or Korean Bul Gogi, or Japanese Sushi
And I have a really yummy cucumber and chicken stir-fry recipe, except I can't find it right now. Will post if I find it!
oh, and GREEK SALAD!!! Tomatoes + red onion + cucumbers + kalamata olives + pepperoncini + hard boiled eggs + capers + feta cheese + vinaigrette with a bit of sugar + oregano
