We are living between two houses right now, packing here, prepping there...We will make the 'big move' the last weekend of June...
With all of this back and forthing...we are eating out TOO much. (and by eating out, I don't necessarily mean restaurants, but stopping by the grocery store to pick up a loaf of bread and sandwich fixings.) We are eating a lot of fruit as snacks because it's so quick and cheap. When I do a shopping trip - I get what I usually would - it's all stuff that requires a fair amount of prep. yet, I have very little time to cook. Should I just give in and buy all quick foods for awhile? What kind of things are healthy, quick, inexpensive, and mobile?

If you take a day and do some prep you can manage cheaper quick meals.. like making up egg salad for sandwiches.. or making bread for sandwiches if that is something you normally do.. or making a huge pot (or 2) of speghetti sauce so that you can have dinner just by cooking up some noodles. By prepping your veggies for salads.. so that you can just grab it from the fridge instead of having to do all the prep right then. grill a whole bunch of chicken and then you can have chicken to slice for a salad or a sandwich. Things like that that take advantage of the good foods you'd normally use but in a quicker fashion, partly by preping and cooking ahead.
See what I'm saying? if you just take one day a week for instance.. do a lot of food prep.. make ahead meals.. and yes plan on buying less make a full meal foods and more sandwiches and whatnot. But by taking that one day.. you've streamlined your other days with regard to food prep.
also consider if you have food at one place and are going to the other.. filling a roaster or crock pot(s) with food and taking it with you to plug in over there.

How exciting!
You might find some ideas here - sports practice and dinner.
Right now I'm working on keeping the refrigerator stocked with condiments. I make them home-made but that's not necessary. For me, the point is to have something yummy ready to dress up dull food.
Ranch dressing: dip for veggies, dressing for sauce, pour on baked potatoes (I slow cook mine.)
BBQ sauce: for potatoes, any meat, sweet potatoes
Cowboy sauce (mix ranch and bbq): all the above
Buttermilk sauce: a caramel sauce for pancakes, toast, muffins, granola
Vinagrette: for salad, sandwiches, and dipping
Pesto: for pasta
Salsa (red tomato, tomatilla, other varieties): for chips, beans, eggs
Guacamole: for sandwiches and chips (a meal in itself)

Great point, Jodie. This is what I would suggest too. If you just take one day, you can get quite a lot prepped.
And I agree with Angie too--so exciting, Lisa! I'm always happy to read your moving plans after you have waited for so long!

During our kitchen renovation I did a lot of crockpot food because the actual cookimg could be done somewhere other than the kitchen. You can prep several meals when you have an hour or two in the kitchen, put them in big ziplocks and stash them in the fridge or freezer. Then you just plop them in the crockpot and plug it in when/where you will need a meal. You can even start the crockpot in one location and then ***carefully*** transport it midway through to another, plug it back in and let it finish there.

How about browning some meat ahead of time and making tacos?
Some of our favorite quick fixes:
peanut butter and apples
yogurt with fruit and nuts
scrambled eggs
We do rely on eggs a lot when we are running. We mix that with some cheese and sometimes throw that in a wrap and go... If you throw in a little protein, people last longer!
If you can just plug in a bit of chili and let it cook in the crockpot it can feed you whatever hour you may need it and it suits everyone....or any kind of crockpot meal for that matter...in your case, maybe 2 crockpots??
