I have a flat of deliciously ripe fresh pineapple. This is the second flat in two weeks - how fortunate am I?! The first week we ate it plain, with cottage cheese, or in smoothies. This week, I'd like to try some new ideas and recipes, like pineapple and ham pizza.

I know it's Lent, but Curtis Stone has a recipe for roasted pineapple that looks way yummy (but way decadent).

Do you have a Vitamix? It's my new toy and I like it. Green smoothies use pineapple and we usually double the amount.
Also, you could probably find a pineapple salsa recipe. Sounds good to me.

How about shish kabobs? Cut up chunks of pineapple and chicken and skewer them... then grill!

it would also be good in chicken salad or as fruit kabobbs (just chunks of fruit on skewers.. my kids think those are much more fun than plain fruit )

I can't remember what the recipe was called but some sort of hawaiian chicken that you scooped out the pineapple after cutting it in half.. and then you serve it in the shell.

I make a Hawaiian chicken in the slow cooker (I invented the recipe with things I had on hand in Hawaii).

2 pounds of chicken breast
1 large pineapple cut up into bitesize pieces (make sure to put the juice in as well)
1 large Maui onion (or any sweet onion) chopped
1 large red pepper cut into bitesize pieces
freshly grated ginger (to taste)---I use about 1 tsp
.5-1 cup of terriyaki sauce (eyeball it until it looks right)

I've never made it myself but when I've had it out and about I so love it grilled like on a shish kabob . I imagine pinapple grilled in slices on the BBQ would be real good ! or what if you stuff it with rice or a gooey kind of cheese like brie and roasted it ? I think it'd be good in chunks in salad with pine nuts .
I'm super hungry right now so I'm thinking of every flavour under the sun that would go with pinapple .
I am also going totally no meat all lent so trying to come up with many fruit veggie dishes. If you are still eating asome meat this lent then chicken & pork go nice with pinapple especially grilled .

Pineapple Salsa with Lime chips is delicious, and you can use it on top of tilapia after cooking it with a spicy seasoning.

Plant the leafy top(s) of the pineapple(s)! I'm not sure how to do so, but I'm sure you could google it. I've seen a houseplant started from the top of pineapple and they grow pretty well. A fun way to extend the joy your family is experiencing with all that lovely pineapple! If you plant several you could gift others with they're very own pineapple plant! I couldn't help adding this, as I envisioned all those lovely pineapple tops going to waste.
