I need low-carb, hot breakfast ideas for my DH. Not eggs, at least not everyday, because cholesterol is an issue too and, ideally, he should get a serving of veggies in as well.
He's not picky and spicy and/or ethnic foods are fine - even preferred.
Ideas? I am such a toast/oatmeal/pancake/muffin girl that I'm having a hard time thinking of anything.

Frozen pre-cooked turkey sausage links - we keep these around for a quick breakfast. The kind we have are 2g Carbs per 3 links (I just fed them to my diabetic niece yesterday. She liked not having to take a shot to eat them.)

Protein options:
Smoked salmon
leftover meats (roast beef, hamburger, ham, steak)
My favorite way to do veggies is to make scrambled eggs and mix in veggies -- tomatoes, avocado, spinach, broccoli.

My husband makes breakfast burritos. Eggs, cheese, sausage or bacon, onion, mix in some salsa, wrap it up into some flour tortillas. You can freeze them and microwave them for later use. DH likes to make them a bunch at a time on the weekends.

You can use nut flours to make pancakes and waffles that are very tasty.

you can do frittata with only egg whites, or use like 1 egg yolk with several egg whites when making scrambled eggs (huevos rancheros?) or omelets

you said low-carb, but I am really fond of using millet grain, cooked every morning and mixing it with hazelnuts or steamed vegetables. For us it really keeps the sugar level even during the first hours of the day.

I second what Jodie said - egg whites instead of the whole egg. I make omelets with them, adding vegetables. Works great!
Has he tried quinoa, to see how it affects his blood sugar? It's so protein rich - I know it holds me all morning when I make it.

I'm not sure where you are, but Trader Joe's carries a frying cheese that we LOVE. I will often cook that up when I make wholegrain pancakes.

My diabetic friend Shawn stir-fries (in cooking spray and olive oil) leftover meat and veggies, then makes an Egg Beater omelette with them. The results: delicious! The hard part: Getting him to share!

Since he doesn't mind spicy, I've been making a bean quesadilla, lately, that I really like.
1 can of rinsed black beans
about a half cup of salsa
1-3 teaspoons of chili powder
a 1/4 cup of water
heat in medium saucepan, on medium heat, stirring occasionally until water is more absorbed and beans get soft.
Take whole wheat tortilla, put a cup of bean mixture on one half, sprinkle with some low-fat cheese (any kind you like,) and fold empty half over the filled side, press down on tortilla and edges. Slide into a heated fry pan with one tsp. of heated oil, cook about 2 minutes on each side, until lightly golden.
Take off and top with more salsa or whatever (I'll cut up lettuce and onion, too, to put on top,) and eat. Pretty good. I can't eat beef, and I got really tired of watching my men eating yummy tacos and such (I love Tex/Mex!,) without me. And cooking up chicken to have in it's place was too much more cooking. Beans are so easy!
